Different bake processing in tobacco baking have different results, such as the tobacco pigment changes, water loss and main chemical components. The change of these indexes have important influence to the quality of tobacco leaf quality,furthermore, it directly related to tobacco industrial enterprise processing quality and economic benefit. And different curing material affects tobacco baking process and tobacco baking quality.At present, in our country, such as producing tobacco smoke rice crop rotation, for tobacco and crop growth in seasonal contradiction, cause the problem of tobacco recovery there are still lower leaf picking overripe, central leaf adopt green, upper leaf mining raw. At the same time, the theory of programmer flue-cured tobacco baking and technology system are spreading. The theory emphasizes the tobacco leaf become yellow under the low temperature, set color phase can extension in the temperature at50~54℃, promote the transformation on aroma of tobacco leaf material. When the dry reinforced phase, the temperature is highest do not exceed70℃, it making higher baking process in effectively improve the aroma of tobacco leaf, suction taste and quality tobacco ratio, reduce roast smoke, etc, the potential is huge. In addition, the developing of curing alteration and applying of new technology is to speed up the pace, curing the problems more, of these problems, restricted the three-step baking process and technical implementation and promotion use.For these reasons, this paper research on the development of different material curing and baking process on tobacco leaf quality impact study, results show that:1. Through the new material the use of curing, the secondary smoke ratio increased by2.4%, the average price increase by0.54yuan/kg, energy consumption cost reduce by0.27yuan/kg dry smoke, two aggregate spending$0.81/kg dry smoke.2. New material non-metallic tunnel stove, its heat transfer performance is inferior, thermal efficiency basic quite, oven, cooling pipe corrosion resistance is strong, repair, maintenance is convenient, service life long, horizontal furnace coal storage, furnace temperature control freely, according to the tobacco supply appropriate temperature changes at any time, to ensure the normal tobacco baking, the province is versed in the operation, time saving, should be the future tobacco baking curing the development direction of the construction.3. Baking process is121, prior to baking48h lower chlorophyll (Ch1.) amount, Ch1. A and Ch1. B content drop speed present a rapid decline,48h later, revealed a slight decline trend; Central and upper part of tobacco leaf chlorophyll content, total Ch1. A and Ch1. B content, roasted first72h in present a faster decline, roasted72h after slow drop revealed a trend.4. Adopting121baking process, each the upper, middle and under different parts of tobacco carotenoid content, their rate of descent presents are lower than those of chlorophyll (Ch1.) the change rule of total rate of descent, therefore, in the baking process tobacco shows yellow slowly. Protein content, in tobacco baking before the start of the show "lower tobacco leaf> middle tobacco> upper leaves" the change rule, with the baking process propulsion, tobacco leaf protein degradation is gradually transformation, but the transformation degradation speed has difference, main show is: lower tobacco baking96h after degradation rate tends to be stable, the degradation rate although slower, but relatively smooth; The central tobacco slice, prior to baking36h protein degradation rate faster, then its degradation rate is slow drop on changes in law; Upper leaves, the protein from0-96h baking time, performance is steady decline trend.5. Adopting121baking process, starch content degradation rate of change show the following rules:the mid-lower tobacco leaf starch degradation rate is higher than the upper leaves; At the same time lower tobacco leaf starch degradation rate and fast in the central tobacco. Bake66h after starch content, lower tobacco less than30%; Central and upper leaves in tobacco leaf and the starch content, should be in baking108h to less than30%.6. Adopting121baking process, reducing sugar content change rules expression is:with tobacco baking time propulsion, content gradually increase; After baking the upper, middle and under three different parts of tobacco, their reducing sugar content respectively in72h,92h and102h to reach peak to peak after the reducing sugar content in tobacco leaves each place, along with the advancement of baking time, all fell.
