As the main pattern to raise applied talented persons of our country, the higher vocational education , undertakes majority of transporting staff and the basic unit superintendent's responsibility for the enterprise. After Premier Wen Jiabao requested the vocational education has to speed up training the highly skilled talented persons, the vocational education classroom reforms are becoming the key point of vocational education.In our country, in the curriculum teaching of"Dining Management", traditional teaching methods are very popular among teachers for they are easily operated. But it has limited students' initiative, the enthusiasm and the creativity, and has been a disadvantage to students' full scale development. The project teaching method is proposed to solve this question, it takes the concrete project as the carrier, completing the project as the power, and mix the knowledge and the skill, to make the students to consolidate and perfect oneself studies during the project process. Regardless of the teaching form and teaching goals, the project teaching has enormous attraction.This article has analyzed the advantages and disadvantaged of the project teaching method in the high duty dining management. The article pointed out that designing the teaching according to the project teaching method can cause the students to study in the utilization and for the utilization, and make the students to devote themselves to the study consciously, which is in favor of stimulating students' creating awareness, sprouting students' innovation motive, and improving the ability of exercising practice, to obtain the feelings of achievements increasingly. Therefore, the author has made two experiments about the project teaching methods, and has tested the achievements of the project teaching methods by analyzing the advantages and disadvantages of the project teaching methods and the traditional teaching methods.Experiment one, the author has done the experiment of the application of the project teaching methods in the higher occupation class of colleges and universities dining management curriculum. First, through the adjustment of project teaching method implementation process, we can find a good way not only to let the students acquire something, but also complete the curriculum teaching task according to the curriculum teaching requests. Next we can adjust the proportion of project marks in the inspection result, hoping to find a proper proportion among the project result, usually the result and the ending result, which not only can reflect how much the students have learned about the elementary knowledge, but also can reflect the students how well they can apply the knowledge.Experiment two, in the year 2006, the author has applied the implementation project teaching method and the traditional teaching methods in the same course"Dining Management" in two parallel classes of grades Universities Traveling Management class of 05 Employees and University Traveling Management class of 04 TV, and has analyzed the advantages and disadvantages of the project teaching methods over the traditional teaching methods through the results of the examinations.The class《Dining Management》is the branch curriculum which each traveling management specialized students must grasp. Nowadays in our country, students who have received higher vocational education are requested that under the big background, when they come to work, they can work; when they work, they are abled workers. The traditional teaching method has not been able to satisfy the needs of the higher vocational education. Therefore the author proposed the project teaching method, but the project teaching method was born abroad, there're big differences between its background and the actual situation of our country. Therefore, we should apply concrete analysis to concrete problems in the practical work, and adjust measures to local conditions.
