Accompanied by a secondary vocational school of tourism educationlevel unceasing enhancement, the reform of teaching method will becomesmore and more compelling, the application research of teaching methodsbecomes inevitable trend."Catering service and management" course hasthe characteristics of strong, professional and practical application,improve the teaching effect need to be in other science teaching methodon the basis of the traditional teaching methods, including a focus onthe project teaching method of combining theory with practice.Research purpose of this paper is to apply the project teachingmethod to the catering service and management in the process of theresearch mainly adopts the methods of literature, questionnaire,interviewing method. Using the literature method about the presentsituation of the food and beverage service and management course teachingmethod of literature was studied. Using survey questionnaires to obtainthe data and analyzing the teaching status to pointed out specificproblems. Using interview method direct communication with students,teachers, collecting research data.This thesis mainly consists of six parts. The first part ofintroduction, the project teaching method of the research background,research significance, research review, research contents and researchmethods is discussed. The second part of the project teaching method thetheoretical interpretation of the origin of project teaching methodrespectively, concept, characteristics, theoretical basis and thenecessity of the application in the food and beverage service and themanagement is expounded. The third part of "catering service andmanagement" teaching present situation and the analysis. Teaching byinvestigating and analyzing the present research situation and explorethe problems existing in the teaching and explore the reason. The fourthpart is the project teaching method in the food and beverage service andmanagement of application design. Comprehensive analysis on theadaptability of project teaching method, teaching application principle,should pay attention to the problems in the teaching procedures andteaching. The fifth part of the project teaching method in the applicationof the catering service and management of teaching practice, this partis the focus of this article. First of all, the food and beverage serviceand management course analyzed, secondly the project teaching method inthe banquet services chapter explores the specific teaching practice. Part6conclusion and prospect, and has carried on the induction summaryto this thesis and the research prospects.
