Cold Chain Logistics Security Evaluation Of Supermarket Fruit Based On FTA

Supermarket is a retail terminal of commodity, food sale is important in supermarket, however, the sales of fruit are important to food sales in supermarket, they take an important position. The security issue of supermarket fruit should be on the agenda, this research about the fruit security included not only deterioration of fruit, but it also included the loss and damage of fruit, and these happened along with the cold chain of the supermarket fruit. In the cold chain of supermarket fruit, the logistics is one of the main links, which connects the upstream manufacturing enterprises and downstream supermarket. According to the survey data, it showed that the pollution of the fruit in the cold chain logistics had always been in a large proportion of security issue, while in the process of the cold chain logistics activities, fruit damage and loss took a large proportion. The security control to supermarket fruit in the cold chain logistics was to ensure the fruit flow on each link of cold chain logistics in accurate quality and quantity, and in order to prevent fruit damage, loss and deterioration. In the cold chain logistics, the security of supermarket fruit was reflected by the security of fruit on each logistics link, and it meant that on each link of the cold chain logistics, if the damage, loss and deterioration of the fruit did not occur, the supermarket fruit was safe. Because in the cold chain logistics, the factors leading to the damage, loss and deterioration of the fruit had the sequence of the occurrence, and had the causal logic connection, this paper adopted fault tree analysis method to analyze the evaluation of the security of the supermarket fruit in the cold chain logistics. Through the fault tree construction, the cause of the damage, loss and deterioration of supermarket fruit was showed precisely, while by the quantitative analysis, we could understand which fault occurred frequently, and need to be controlled first, so it took a guiding role in the safety of the activities in the logistics. At the same time, the factors undermining the safety of supermarket food in the cold chain logistics were complicated, so we could not got the precise probability value of all the basic events. The paper used the triangular fuzzy number to assure the final safety evaluation result was closer to the reality.
