Small-scale caterings are gradually becoming the major place to have dining with the development of society and economy. However, food safety status of small-scale caterings is not optimistic due to various limitation. The objective of this study was to analyze intervention efficacy of food security and employees' food safety awareness acknowledge on standardization management of small-scale caterings via certain investigations and researches. To propose suggestions on food safety promotion supervision and to provide the scientific basis for the further regulatory measures of small-scale caterings. Meanwhile, through the analysis food safety situation and changes of small-scale caterings with different stages or various profit-and-loss, and to find the factors which will be targeted to carry out further supervisions.The questionnaires for the survey were designed. The survey on food safety, food security score and the level of food safety knowledge test were conducted. The standard management training and exchange study were carried out in intervention group. After intervention, survey on food security and the level of food safety knowledge were conducted repeatedly.The results were as follows. The employers of small-scale catering generally considered that food safety played an important role, but in the knowing rates of standardization system and standardized management were relatively not high. Food safety conditions improved significantly after standardization management intervention. Employees' food safety knowledge increased, but the improvement was not as significant as the food security situation via our intervention measures. Intervention measures act less importance roles on different stages and various profit-and-loss conditions to improve their food safety level.The suggestions are as follows:Various forms of propaganda and training can be enhanced, to improve the knowledge of the standard system and standardized management. Standardized management can be implemented appropriately in caterings. Popularization of standardized management systems in food and beverage industry should focus on the concept of indoctrination, rather than pure knowledge training.
