This paper through on-the-spot investigation, the questionnaire and survey method analyzes400catering employees’perception of the food safety which were in50different catering enterprises and in different areas of china.The main content includes the basic information of employees, employees’perception of laws and regulations on food safety, such as relative concept, and understand how much they know about food safety knowledge and how they influence their cognitive factors. This paper found that employees in catering enterprises do not well understand the foodborne hazard and quantitative management, but the preservation of the refrigerator, health certificate, procurement of food and raw materials are well understood. Employees with higher education background and more training are better than others in these aspects.And this paper analyzes200catering customers’perception of the food safety which were in25different catering enterprises and in different areas of china. The analysis showed how they are familiar with food safety laws and related knowledge.It found that more than seventy-percent consumers pay close attention to the food safety, and along with the improvement of education, they pay more attention to food safety. Nearly fifty-percent consumers believe that the current food security situation is under their expection.They worry about food safety,and pay more and more attention to the food safety and food hygiene.They encounter different food problems,and foods with foreign matter were much more than food poisoning.Through the six keywords of catering enterprises, hotels、restaurants、hotel、restaurant and fanzhuang,this paper summarizes the number of Chinese catering enterprises through the HACCP or ISO22000authentication.It is found that the relative number is very small, especially in underdeveloped areas. This paper also found that economic condition is not the crucial factor to the certification of HACCP, for there are just eight enterprises in Jiangsu, Shanghai, Zhejiang which pass the HACCP certification.Combined with the questionnaire survey, this paper analyzes and classifies questions which have been ignored by the people related to physical、technical、consume food safety problems.In conjunction with the relevant enterprise empirical analysis,this paper puts forward corresponding measures and suggestions, such as improving the professional standards of employees, strengthening the food safety awareness、strengthening infrastructure construction、improving the food processing industry,and strengthening the HACCP and ISO22000certification management.This paper puts forward measures to five different catering enterprises in different area of china collecting relevant data and analyzing the data. The feedback information about the food safety from40employees and40consumers in these5catering enterprises was selected as data. According to the analysis of the data, their score are significantly higher, complaints about these catering enterprises are less than before and the satisfaction of consumer to catering enterprises are improved.
