Temperature control in the process of beer brewing has significant influence to final product's quality. Dearated water is necessary in the process of beer brewing. Its temperature will affect the product's temperature, because of this; will affect the product's sapor. So the temperature of the water mast be well controlled. This paper bases on the problem of slowly falling of water temperature in the process, and easily affected by the pressure of ammonia through the heat exchanger, change the control program of the dearated water process equipment. Because of the long lag of the system, traditional PID control and self-adaptive fuzzy control can be use together, study and use fuzzy self-adaptive PID temperature controller. The outlet dearated water's temperature can be controlled by turning the flow rate of inlet water to the system when pressure of ammonia changes. In the control system, fuzzy regulator is the core of the controller, design and adaptive of the controller will decide its performance. The current outlet temperature will be sampled by the system, then compare it with the set value, to get the error value and the rate it changes. The setting fuzzy regulator then will be applied to decide the current gain of the controller's parameter. So the real parameter of the controller can be calculated by add the gain to the initiate value. The parameter changed PID controller the will be applied to control the system's outlet temperature. After the change, when compare the sampling outlet temperature data of the system, it can be consider that fuzzy self-adaptive PID controller has better dynamic and static performance compared to traditional PID controller. To the changes of system parameter, bad control parameter or altering of the running environment, the controller can adapt itself and has good online ability.
