Lotus root is a well-known edible rhizome part of lotus,while lotus rhizome node is usually discarded in daily life and production due to the hard texture and bad apperance,leading to a waste of source.Lotus rhizome node has polyphenol and polysaccharide substances giving it antioxidant and immune enhancing functions.Developing lotus rhizome node products has the advantages of fully expoiting then utritients,conserving agricultural resources and being environmentally friendly.Chinese yam has wide distribution and high yield,and is rich in polysaccharides.Albeit inedible,pitaya peel,cucumber peel and maple leaf are vitamin-rich green pigments.In this experiment,fresh lotus rhizome node was used as the main raw material,and Chinese yam is selected as a secondary raw material.Pitaya peel,cucumber peel and maple leaf were treated as humectants and coloring agents.After addition of appropriate auxiliary materials,the mixture is evenly mixed and tabletted to prepare colored chewable tablets.The tablets were characteristics of beautiful color and apperance,moderate hardness,nutritious and delicious,simple processing procedures and meet the hygiene requirements of the production of edible chewing tablets.It is suitable for mass production.In this paper,the processing procedures of colored lotus rhizome node-yam chewable tablets were studied,and the best processing conditions were obtained through a series of experiments;1.The best preparation process of lotus rhizome node powder: lotus rhizome node slices with the sickness of 0.5 cm were soaked in compound color fixative containing Vc(0.2%),citric acid(0.4%),L-cysteine(0.1%)and L-malic acid(0.1%)for 15 min.The temperature of drying was 55?and duration of drying was 14 h.The slices were pulverized,and sieved with 60 mesh to obtain lotus rhizome node powder.2.The best preparation process of Chinese yam: after the yam is folded to an appropriate length and steamed for 15 min,the yam was cut into 6 mm slices with stainless steel,then dried for 15 h in a drying oven at 60?,crushed and sieved through a 60 mesh sieve to obtain yam powder.3.Preparation of humectant:Red humectant is obtained by juicing pitaya peel,adding8 U/g pectinase,enzymolysis at 60? for 45 min,filtering and sterilizing;Green humectant was acuquired by squeezing cucumber skin,filtering,and sterilizing;The yellow humectant was obtained by cutting turmeric into small pieces,filtering juice from a juicer,andsterilizing;Black humectant was obtained by boiling maple leaves with twice the amount of distilled water for 1.5 h and filtering.4.The best chewing tablet formulation and granulation process : 48 g of lotus rhizome node,16 g of Chinese yam powder,20 g of microcrystalline cellulose,1.5 g of xylitol and 15 g of soluble starch.Using the prepared wetting agent to form soft material,and dried in a drying oven at 55 ° C for 2 hours,then 1% talc powder is added for tableting,thus colored chewable tablets were obtained.5.The chewable tablets prepared in this experiment have bright color,smooth surface,few cracks,pure taste,moderate hardness,delicate taste,fresh fragrance and meet the production requirements.
