The walnut residues after squeezing oil is still rich in protein and dietary fibers,with greatly utilization value.However,researchers home and abroad focus on the utilization of walnut residue protein,and the utilization of walnut dietary fibers has not been reported.This paper used walnut residues as raw material,adopted respectively enzyme-extraction method and chemical extraction methods to extract dietary fibers,and further analyzed the effects of the two extraction methods on the physiochemical indices of dietary fibers,including water-holding capability,swelling capability,oil-keeping capability and viscosity.The functional characteristics of dietary fibers extracted using the two methods were investigated too.In addition,the paper developed a method to process a walnut tablet rich in protein and dietary1.Fibers,in hope of providing theoretical basis and technique parameters.The extracting rate of dietary fibers using enzymes is higher compared with chemical extraction methods,while the latter had higher purity of dietary fibers.FTIP scanning suggested that chemical methods hydrolyzed partial cellulose into hemi-cellulose.Besides,X-ray diffraction indicated that chemical methods obviously damaged the crystal structure of cellulose in walnut dietary fibers.2.Compared with chemical extraction methods,the walnut dietary fibers extracted using enzymes has superior water-holding capability,swelling capability and viscosity.However,the walnut dietary fibers extracted using chemical method had better oil-holding capability.3.The water-holding capability and swelling capability of walnut dietary fibers were closely related to its particle sizes.When the particle sizes of walnut dietary fibers ranged from 40 mesh to 120 mesh,walnut dietary fibers has both excellent water-holding capability and swelling capability,the bigger or smaller mesh caused the decrease of water-holding capability and swelling capability.4.The walnut dietary fibers extracted using the two methods have all obvious the blocking capacity against glucose,the absorption capacity of cation(Na+)and the scavenging capacity of DPPH,respectively.The smaller particle sizes,the better blocking capacity.Besides,the dietary fibers extracted using chemical method had better absorption capacity of cation,while the dietary fibers extracted using enzymes had higher scavenging rate of DPPH.5.The formula of walnut chew tablets was obtained through optimizing process parameters and composition formulas.The walnut residues 20.5%,milk powder 30.7%,glucose 20.5%,xanthan gum 7.7%,magnesium stearate 3.6%,dietary fibers 17.0%.6.The best process parameters for shaping tablets was drying temperature 40?,drying time 57.6 min,the ethanol concentration 60.40%,and under such condition,the shaping rate of tablets was 68.37%.
