Coix Lachryma-jobi Kernel is very popular with high nutritional value and medicinal value. It was confirmed by scientific experiments that Coix Lachryma-jobi Kernel have some efficacy including hypoglycemic action, anti-cancer effects, beauty and so on. Coix Lachryma-jobi Kernel is not convenient to eat, and easy be damp and mildewed, to some extent, that limit the development and utilization of the resources of Coix Lachryma-jobi Kernel. Chewable Tablet have some advantages including simple process, consumption of convenience and good stability. When Coix Lachryma-jobi Kernel made into Chewable Tablet, it is convenient for us to eat and carry it. In this thesis, taking Coix Lachryma-jobi Kernel as raw material, composite enzymatic hydrolysis followed by ultrasonic processing was applied to extract active ingredients of Coix Lachryma-jobi Kernel; the spray drying technology was used to improve performance of the powder, aimed at producing the Coix Lachryma-jobi Kernel powder with good flowability and compressibility; finally direct compression was applied to make Coix Lachryma-jobi Kernel chewable tablet. The main results are as follows:(1) Study on the extraction process of composite enzymatic hydrolysis followed by ultrasonic processingBased on the extraction rate of polysaccharide and soluble solids content, The factors including the selection of enzyme species, ratio of compound enzyme, the enzyme dosage, reaction time, reaction temperature and pH value were explored and studied. The single factor experiment and orthogonal optimization was applied to optimize the processing of the composite enzymatic hydrolysis. The optimum parameters by optimizing process were Cellulase and Papain compounded at mass ratio of1:2, the enzyme dosage1.5%added, reaction time for2.3h, reaction temperature at50℃and pH value of5.0. After composite enzymatic hydrolysis, ultrasonic processing was used to enhance the extraction. Based on orthogonal optimization, the best process conditions were confirmed,which ultrasonic power at350w, ultrasonic time for35min and processing temperature at70℃. Under the above conditions, it was proved to be that the extraction rate of polysaccharide was10.54%, and soluble solids content was8.7%. (2) Study on the processing of the Coix Lachryma-jobi Kernel powderAfter the Coix Lachryma-jobi Kernel extract processed by emulsification and homogenization, the spray drying technology was applied to make the powder. The effect of inlet temperature, atomization pressure and feed rate on sensory evaluation, moisture content, the angle of repose and carr index were studied respectively. Based on single factor experiment, the quadratic orthogonal rotation combination test design was applied to optimize inlet temperature, atomization pressure and feed rate and build data model. The optimal process parameters were confirmed by analyzing and forecasting the angle of repose and carr index, which inlet temperature at176℃, feed rate at14mL/min and atomization pressure of0.4MPa. Under the above conditions, it was proved to be that the angle of repose is41.3degrees and carr index is16.0%.(3) Study on the processing of the Coix Lachryma-jobi Kernel chewable tabletThe chewable tablet is mainly made of the Coix Lachryma-jobi Kernel extract by the technology of direct compression. The influence of fillers(microcrystalline cellulose and lactose compounded at mass ratio of1:1), aerosil, and magnesium stearate on compression were studied respectively by means of measuring the yield and hardness of chewable tablet. On the basis of orthogonal experiment and verify, the optimum formula of chewable tablet was confirmed as18%fillers,0.7%aerosil, and0.6%magnesium stearate. Under these conditions, the yield and hardness of chewable tablet was proved to be94.3%and85.2N, respectively.
