Wheat is the main crop in our country,with the development of wheat processing and the expansion of its utilization,it is an inevitable trend of wheat processing industry to achieve the deep processing of wheat resources.The wheat resources are rich in pensoan,which can loose the bowel to relieve constipation,lower serum lipid and plasma glucose,improve gastrointestinal flora,prevent colonic cancer and other functions.In recent years,the study of wheat pentosan are mainly concentrated in its extraction,physicochemical properties and functional characteristics.There have been few reports on the research on the use of its deep processing into food.Based on the wheat pentosan crude extract as raw materials,this article researched its main composition and developed two kinds of pentosan products.It has a certain guiding significance to the deep processing industry of wheat resources.The main contents of this study are as follows:(1)Determination of the main components of wheat pentosan crude extract,including protein content,total sugar content,pentosan content and monosaccharide composition.The results showed that protein content was 8.37%,total sugar content was 80.64%,pentosan content was 15.72%.It was composed of 4 kinds of monosaccharide,mainly by arabinose,xylose and glucose,and there was a small amount of galactose,with mole ratio of 0.55?0.62?1.47?0.19,the degree of substitution(Ara/Xyl)of 0.89.(2)Using wheat pentosan crude extract as the raw material to prepare pentosan chewable milk tablets,the optimal formula were determined by single fator and orthogonal tests,and the basic components were analyzed.The results showed that the optimal formula of pentosan chewable milk tablets was pentosan crude extract 14.5%,milk powder 43.5%,maltodextrin 20%,glucose 20% and magnesium stearate 2%.It was prepared by direct tableting,the pentosan chewable milk tablet was pale yellow,colour and lustre was uniform,complete appearance,smooth surface,no visible impurities,delicate taste,non-stick teeth,has special aroma and flavor of pentosan with milk.(3)Using wheat pentosan crude extract as the raw material to prepare pentosan effervescent milk tablets,the optimal formula were determined by single fator and orthogonal tests,and the basic components were analyzed.The results showed that the optimal formula of pentosan effervescent milk tablets was pentosan crude extract 24.39%,milk powder 24.39%,sodium bicarbonate 24.39%,crtric acid 24.39%,sucralose 0.49% and PEG 6000 1.95%.When the effervescent tablets dissolved in 100 mL water,the average disintegration time was about 2.45 min,the beverage was milky yellow,clear and transparent,no precipitation,rich in the flavor of pentosan and milk.
