Lotus(Nelumbo nucifera Gaertn.ssp.nucifera)is a perennial aquatic plant used as an vegetable in China.The lotus knot is the non-edible part in lotus rhizome.It is shown that lotus knot contains protein,dietary fiber,vitamins and other nutrients.In addition,lotus knot also includes polyphenols,tannins,polysaccharides,these substance has anti-oxidation,improve immunity and other functions.Red jujube is a traditional food in our country,which includes polysaccharide and VC.Modern scientific research shows that red jujube has high nutrition health care value and significant health effects.Chewable tablet is a special tablet that absorbs directly after chewing in the mouth without the disintegration process.In the field of food,chewable tablet is a new form of processing,the combination of jujube powder and lotus knot powder to produce a chewable tablets is a kind of beneficial attempt and is also an effective solution to solve the development of jujube deep processing,improve the utilization rate of lotus knot,increase the form of processed products of jujube and lotus knot.In this study,the Xin jiang Jun jujube and lotus knot were used as raw material,chewable tablets of red jujube and lotus knot manufacture process was optimized.The main research contents and results are as follows:1.The best conditions of lotus knot powderChoosing no mildew,deterioration of the fresh lotus knot,with water clean several times and retain the fibrous roots.It was cut into 4 mm thick slices.The lotus knot slice was soaked at room temperature with 0.4%VC,0.3% citric acid,0.35% L-cysteine,0.1% L-malic acid solution for 15 min(the solid-to-liquid ratio 1:50),and dried by air blower at 55°C for 15 h,using multi-purpose crusher crush,over 60 mesh sieve that is lotus knot powder.2.The best conditions of red jujube powderChoosing no rotten,full shape of dry Xin jiang Jun jujube,with water clean several times,jujube was cut into 6 mm thick slices.The jujube slice was soaked at room temperature with distilled water for 10 min,and dried by air blower at 60°C for 18 h,using multi-purpose crusher crush,over 60 mesh sieve that is red jujube powder.3.The best technological conditions of designing chewable tablets project and making particlesAccurately weighed 35 g lotus knot powder and 25 g red jujube powder,added 0.1 g protein sugar,1.5 g xylitol,0.5 g citric acid,38 g soluble starch mixed,crushed over 60 mesh standard sieve,added distilled water,then made these into soft material,pressed over 20 mesh sieve,and dried by air blower at 55°C for 2 h,with 1% talc powder pressed into tablets.4.The chewable tablets of red jujube and lotus knot prepared by the test have moderate hardness,are easy to chew,with delicate taste.The weight difference and the microbiological limit meet the standard,per 1 g of chewable tablets have 5.47 mg of polyphenols,190.857 mg of polysaccharide,0.217 mg of polysaccharide.
