| The post-epidemic period is based on stable economic development,the accelerated pace of life,demographic changes and the increased frequency of residents dining out and ordering takeaways,leading to long-term changes in eating habits.As a result,the catering industry is showing a stable development trend.In addition,operating costs in the catering industry continue to rise,with high labor costs,raw material costs and housing rents.As the catering industry is a traditional industry,many companies do not priorities exploring profitability models,resulting in a reduced ability to make profits.The reason for this is that they have not kept up with the changing market trends and consumer preferences,resulting in a lack of innovation and differentiation in their products and services.As a result,these companies may struggle to stand out in a highly competitive environment and fail to generate sufficient returns on investment.In recent years,the market size of the food and beverage industry has grown rapidly,with the development advantages of chain restaurant companies in particular presenting themselves.The continuous increase in the chain rate has led to higher requirements for standardization of ingredients and stability of taste,and as the consumer group continues to get younger,the catering category is gradually changing from Chinese catering dominated to Western fast-food category.In this paper,an unlisted Western-style fast food chain restaurant in Guangdong Province,Uncle Pork Chop Bun,is selected as a case company to define its profit model,and to sort out its internal value chain,and to analyze the five major components of the profit model,namely profit point,profit object,profit leverage,profit source and profit barrier,which are included in the basic and supporting activities of the value chain.The impact of the elements of Uncle Pork Chop Bun’s profit model on the path of financial data is then analyzed,and the extent to which each element of Uncle Pork Chop Bun’s profit model contributes to its net profit is explored in depth.The profitability model of Uncle Pork Chop Bun is analyzed in terms of operating revenue,operating cost,promotion cost,net profit,consumer preference,geographical analysis,product research and development,own logistics supply chain,upstream and downstream industrial chain,etc.The profitability model of Uncle Pork Chop Bun is finally comprehensively evaluated by using hierarchical analysis.Finally,the study found that although Uncle Pork Chop Bun’s current profit model has formed a unique competitive advantage by building its own logistics system,integrating the upstream and downstream industry chains,and insisting on using handmade bread,it still suffers from the inapplicability of the "takeaway-based,dine-in" model,serious copying,single profit point and high operating costs.However,there are still problems such as inapplicability of the "take-away and dine-in" model,serious copying,single profit point and high operating costs.Therefore,this paper further proposes the following optimization recommendations:Uncle Pork Chop Bun should continue to expand its shops and increase the proportion of dinein food in order to expand its profit sources and thus contribute to revenue growth;increase profit points to increase revenue;adhere to innovation and attach importance to talent training to maintain the effect of profit leverage;further improve its own supply chain construction and accelerate the integration of upstream and downstream industrial chains to consolidate the profit barrier in order to achieve sustainable development.Through the exploration of the profit model of Uncle Pork Chop Bun,we hope to lay the foundation for Uncle Pork Chop Bun to explore a more effective profit model in the future,and at the same time,we hope to provide some reference basis for the relevant small chain restaurant enterprises and those who want to enter the catering industry. |
