| With the accelerated development of digital economy,the online catering service industry is developing rapidly.Consumers can enjoy delicious food without leaving home.The online catering service model caters to the needs of consumers and provides convenience for consumers’ life.However,at the same time,the low threshold of access for catering businesses,the low level of food safety management,the non-standard distribution behavior,and the untimely protection of consumers’ consumption rights have occurred from time to time.The healthy development of the online catering service industry is facing great challenges,which makes it imperative to analyze and strengthen the management of the food safety of online catering services.Food safety is related to people’s health,people’s well-being and social stability.Therefore,the main goal of this paper is how to strengthen the food safety supervision of online catering services to ensure food safety.Based on the research background,research significance and research status of food safety supervision of online catering services at home and abroad,and referring to the relevant theories of food safety of online catering services,the supervision status of online catering services industry in NT city and the analysis of local 12315 complaints and reports,this paper uses literature research,statistical analysis and other research methods to find out the main problems of food safety of online catering services in NT city,combined with the reality of food safety supervision,21 risk factors of food safety of online catering services are identified from five aspects: platform,merchants,distribution,consumers and other links,and the framework of food safety risk factors of online catering services in NT city is constructed.The data of food safety risk factors were collected by designing and issuing questionnaires online.Descriptive analysis,reliability and validity analysis and other statistical analysis methods were used to analyze the data of risk factors,and analytic hierarchy process was used to analyze the influence weight of risk factors to screen out important risk factors.On the basis of obtaining the identification and analysis of important risk factors such as online catering service food safety laws,regulations and policies,the level of business access threshold by the third-party platform,the purchase and storage of raw materials,the packaging of takeout food and the rationality of takeout distribution process,take the important risk factors as the key control point factors in the HACCP management system,and analyze,judge and control the key control point factors,Build the food safety HACCP management system of NT online catering service.Three online catering businesses are selected as the application examples of the management system.It is analyzed from the aspects of food safety level,enterprise income,social feedback and government supervision,and comes to the conclusion that the business management level is improved,the social feedback is good,and the government supervision efficiency is improved.At the same time,targeted from the platform,merchants,distribution,consumers and other links,this paper puts forward the governance measures of food safety supervision of online catering service in NT City,so as to ensure the healthy development of online catering service industry.Finally,the difficulties and deficiencies of this study are described,and the prospects for strengthening the food safety supervision of online catering services are made,which provides a certain reference for the follow-up strengthening of food safety supervision of online catering services. |
