The "Cantonese Cuisine Master Project" is an important means for Guangdong province to effectively promote farmers to achieve poverty alleviation and get rich and win the battle against poverty.It is also an important measure to consolidate the achievements of poverty alleviation and improve farmers’ income level in the future.Based on the research results at home and abroad,this paper puts forward the starting point of this thesis,carries out case analysis to obtain the factors restricting the training effect of "Cantonese chef Project",puts forward the solution under the guidance of the problem,draws the conclusion and proposes the practice improvement of "Cantonese Chef Project" in the future.First of all,the paper establishes a "reaction-learning-behavior-result" evaluation model framework of the farmer vocational training effect of "Cantonese Chef Project" by using The Corleone’s four-level training effect evaluation model.This paper analyzes the effect of guangdong province "Cantonese cuisine master project" farmer vocational training by questionnaire survey.Most of the farmers who took the initiative to participate in the training of "Cantonese Cuisine Master Project" were male,aged in the middle and young stages,with junior high school,senior high school or technical secondary school education.Most of them were farmers engaged in agricultural production and processing before the training,while some colleges were engaged in catering industry.The main goal of participating in the "Cantonese Cuisine Master Project" is to raise their income,learn Cantonese cuisine and switch to the catering industry.Cooking skills are the main pursuit of students.Age,educational background and annual income have significant influence on the training effect of "Cantonese Cuisine master Project".Secondly,the evaluation results of the response level of the training farmers of "Cantonese Cuisine Master Project" show that the curriculum content is highly relevant,training materials and other logistics support is good,the training courses are highly practical and innovative satisfaction,but also exposed the deficiencies of the teaching quality level and assessment management mode of teachers.At the learning level,the results show that the improvement of students’ learning quality focuses on their own knowledge and skills;But the effect of listening in class is poor,knowledge absorption is relatively general;At the behavioral level,the results show that the students’ cognition of catering laws and regulations is the best,and their pride is improved.However,it is still inadequate in terms of self-satisfaction,achievement and respect from others,which reveals that the "Cantonese Cuisine Master Project" has to some extent ignored the changes and guidance of its own internal level in the farmer college.From the effect analysis at the behavioral level,it can be seen that the sales scale and profit level are greatly improved,which promotes the improvement of the quality level of local catering tourism.However,there are still low number of catering customer buyback and the cost has not been effectively controlled.Finally,in the form of regression analysis and hypothesis testing,this paper proposes that the effect of "Cantonese Chef Project" farmer vocational training is restricted by three factors: reaction,learning and behavior.The optimization and improvement direction based on the influence of response,learning and behavior on training effect is proposed.At the response level,we should pay attention to the comprehensive education of "Cantonese Cuisine master Project",optimize the teaching conditions of "Cantonese Cuisine Master Project" and improve the quality of teachers trained;At the level of learning,the correlation between teaching and training content and time and the guarantee mechanism should be optimized,and the classroom training certificate and economic reward mechanism should be constructed.At the behavioral level,the learning and practice behavior of cantonese catering training farmers should be standardized,and the follow-up guidance and support mechanism should be set up to strengthen the behavior change of trained farmers. |
