Dish name is a social language form with obvious regional cultural characteristics.In this paper,dish names derived from recipes,corpora,websites and field investigations are taken as the basic corpus,and relevant theories such as cultural linguistics and language typology are used to describe and analyze the dish names of Hubei,Hunan,Henan and Sichuan.Through cross-regional investigation and analysis of the dish names of the four places,the similarities and differences in language and culture of the dish names of the four places are found.There are three main parts:Firstly,it summarizes the research purpose,significance and methods of this paper,and points out the limitations of the study of dish names.Combining the limitations,it takes the dish names of Hubei,Hunan,Henan and Sichuan as the research object to explore the relationship between language and culture.Secondly,through a comparative study on the language of the four dishes,it is found that there are commonalities and personalities in language.It mainly carries out a comparative study from the two aspects of pronunciation and grammar.In the aspect of pronunciation,it also studies the number of syllables and the rhythm of syllables respectively.In terms of the number of syllables,the dish names of the four places are dominated by four or five syllables,and the syllables on both sides gradually decrease.The syllables of less than four syllables and more than five syllables account for about12%-25% of their respective cuisines,and the longer the syllables of more than five syllables,the fewer the number of related dishes,and the two show an opposite relationship.In addition,the number of syllables in the names of dishes in four places can be divided into three gradients on the whole,but there will be different distributions within these three gradients.At the same time,short-term memory and language economy principles are used to explain the relevant content.In terms of syllabic rhythm: The main prosody types of syllables in the names of four dishes are the same,that is,the two syllables are mainly 1-1,the three syllables are mainly 2-1,the four syllables are mainly 2-2,the five syllables are mainly 2-3,the six syllables are mainly 2-2-2,and the seven syllables are mainly 2-2-3.In the dish names of the four places,the distribution range of prosody types below six syllables(including six syllables)is relatively concentrated,while the distribution range of prosody types above seven syllables(including seven syllables)is wide and not concentrated.The prosody types of the second,third and fourth syllables in the names of four dishes are basically the same,but the prosody types of the fifth,sixth and seventh syllables in the names of four dishes show different distribution.At the same time,the prosody mechanism and Chinese disyllization theory are the main explanations.In terms of grammar,it also studies from the perspective of grammatical structure type and word order type respectively.In terms of grammatical structure,there are definite middle,verb-object,subject-predicate and joint types in the phrase structure types of the four places,and the joint phrase is the type with the least proportion.Nominal words are the main components of the central language,modifier,subject,object and joint structure of definite middle,subject-predicate and verb-object structures in the names of dishes in four places.In terms of the composition of structural types,each type of structure has individual components in the name of a dish,that is,personality,and the distribution of each type of structure has the same components in the name of two dishes,that is,commonality.At the same time,it will be explained through consumer psychology and dissyllabification and other related theories.In terms of word order types,the basic word order types of cuisine names in Hubei,Hunan,Henan and Sichuan are mainly based on attribute-material and action-subject,which account for the heaviest proportion,while accept-action word order types account for the least proportion.The main compound word order types of the four dishes in Hubei,Hunan and Henan are in the order of action-acceptor-action,attribute-material-material,and method-attribute-material.However,the main components of basic and compound types and the usage frequency of main word order types in Hubei,Hunan,Henan and Sichuan are different.The coincidence degree of main compound word order types in the names of the three regions of Hubei and Xiangchuan is high,while the coincidence degree of the main compound word order types in the names of the three regions of Hubei and Xiangchuan is low.In addition,each region has its own word order type.In Hubei cuisine,there are attribute-material-attribute and attribute-material-attribute combination types that end with attribute.In Sichuan cuisine,there are action-attribute-acceptance-acceptance-and in Hunan cuisine,there are attribute-action-acceptance-acceptance-type.In terms of finding and summarizing the similarities and differences in word order,relevant knowledge such as the principle of focus lagging and the theory of language typology will be used to explain.Finally,through the comparison of language features,the cultural similarities and differences of the four dishes are studied and analyzed mainly from the same cultural connotation and different cultural connotation.In terms of the same cultural connotation,The language features of the four dishes in Hubei,Hunan and Henan all reflect the material culture of rich products,diverse cooking methods,the historical culture of remembering historical figures,the pursuit of auspicious wealth,the innovative and inclusive psychological culture and the concept of dietary harmony.On the basis of investigation and analysis with the same cultural connotation,it is found that the ancient Chu culture has a certain influence on it.It can be said that it is the influence of the ancient Chu culture on its regions that leads to the common cultural reflection of the dish names in the four places.In terms of different cultural connotations: the language features of the four dishes in Hubei,Hunan,Henan and Sichuan reflect different cultural contents.For example,Hubei cuisine also reflects the unique fresh flavor,steaming and simmering skills,eating customs of soup and so on.According to the standard of dividing cuisines and the cultural differences reflected in the names of cuisines in Hubei and Henan,it can be inferred that Hubei cuisine can be a separate cuisine,and the same as Hunan cuisine and Sichuan cuisine,but Yu cuisine cannot be a separate cuisine,its status is weaker than Sichuan cuisine,Hunan cuisine and Hubei cuisine. |
