In recent years,food and beverage consumption is becoming more and more popular.For the sustainable development of catering enterprise,Chinese chain catering enterprises usually choose to build their own central kitchens to resolve the problems of product standardization,cost control and production efficiency,due to the restriction of product quality control and management level,etc.However,the production capacity of self-built central kitchen is excessive,and the construction and operation are costly,when the scale of the enterprise is insufficient.The increasing burdens lead to many enterprises in the industry change their mind to consider OEM mode.Based on the characteristics of OEM mode and the particularity of food,it has been an urgent issue how to assist enterprises to assess scientifically and strictly whether this new production mode can cope with the current predicament and ensure the quality.First of all,this thesis takes central kitchen OEM project of fast-food chain company Y as the subject of research to find out the core problems that the company needs to make decisions,through the descriptions of the enterprise operating status and the sore point of self-built central kitchen.Secondly,according to the relevant theories of assessment criteria and assessment methods of OEM mode,by means of Delphi method,all the influencing factors of this project are analyzed to identify the dominant ones,including the demand and anticipated benefits of project proposal,quality system and cost analysis of supplier selection and quality management and schedule management of project management,to build up the assessment system.Finally,countermeasures and suggestions are provided based on the assessment results and defects found during the process of assessment.The purpose of this thesis is to find out the main factors affecting each assessment system based on the research on central kitchen OEM project of company Y;to identify the deficiency of the assessment systems according to the assessment process and results;and to sort out efficient information to provide a reference to enhance assessment system in the future.
