Organic substances are widely distributed in all aspects of human life,as well as in cultural relics. However, for the sake of time, most of them are retained in relics in the form of residues. Therefore, the analysis of organic residues in cultural relics can provide abundant information for us to understand the life of the ancients. However, due to the particularity of cultural relics, the analysis of organic compounds has always been a difficult point. This paper focuses on the polysaccharide components in organic residues, and analyses the commonly used vegetable gum and two kinds of liquor. The main component of vegetable gum is polysaccharide carbohydrate, which is extracted from the secretion of plant stem, root and so on.Chromatography has been widely used in the determination of cementitious materials. Its principle is that the composition and proportion of cementitious materials are different according to the composition and proportion of different cementitious materials. Therefore, the known cementitious materials can be used as reference materials to determine the composition and proportion of cementitious materials. The content is divided into four chapters: Preface, through consulting a large number of literatures, discusses the analysis methods of organic residues, summarizes the advantages of previous work, and points out the shortcomings of its research, especially in the field of polysaccharides. The working curves of several common monosaccharides under laboratory conditions were established to determine the components and proportions of monosaccharides in polysaccharides. After that, the monosaccharide components and ratios of several common gums were determined, and the differences of monosaccharide ratios among them were determined. Then, the samples of cultural relics were analyzed to determine whether there were any sugar components in them. After that, the analysis of liquor and some different wines showed that there were differences in sugar composition and content, and then cultural relics samples were analyzed.Based on the experimental results,a feasible micro-damage analysis method for cultural relics was established to identify the sugar components.
