This paper mainly studies the catering culture of Bashu area in ancient China from pre Qin to Wei,Jin and southern and Northern Dynasties.The catering culture of Bashu area in this period is an indispensable part of the study of Bashu culture.The historical records of "food is the most important thing for the people" and "food is the first of eight policies" not only reflect the wisdom of the ancients,but also illustrate the importance of food in the process of social development.The food culture of a region is related to and embodies all aspects of social spiritual life and material life of a region.From the development and connotation of its food culture,we can see the historical development process of Bashu region.Bashu region,with its unique natural and geographical conditions in the middle and upper reaches of the Yangtze River,became the space for the survival and development of ancient Bashu ancestors.The diversified natural environment has laid a solid foundation for the diversified style of Sichuan food culture.The source,processing and storage of food raw materials in Bashu area are also unique.From the aspect of production form,Bashu region has always been an economic form with planting agriculture as the main form and animal husbandry and fishing and hunting as the auxiliary.Due to the rich products,handicraft industry is developed,including salt industry,wine making,etc.The ancestors of Bashu developed a series of food processing technology,tools and social division system according to local conditions.These factors determined the diet structure of the ancestors of Bashu,which was mainly composed of five grains,supplemented by meat,fruits and vegetables,and also created and formed the regional diet tradition of "eating wild food miscellaneous".The cooking style of the food in Bashu region shows the diversity of the food culture in this period,and the unique food flavor reflects the originality of the food culture in Bashu region.At the same time,after Qin and Ba Shu,they accepted immigrants from all over the country and integrated the food culture of all over the country.Because the rulers of Qin and Han Dynasties implemented the system of livingin groups,the food traditions of all ethnic groups can be completely preserved.All of these laid a historical foundation for the formation of Sichuan cuisine.Salt,pepper,dogwood,honey and other condiments are widely used,forming the unique flavor of Ba Shu diet culture in this period.From the evolution of food utensils sorted out by archaeological discoveries and literature records,we can see that common cooking methods began to appear in this period.Bashu area is also very rich in drinks.It is not only one of the earliest areas to plant tea in China,but also one of the centers of ancient wine making industry.Tea and wine also penetrate into all aspects of social economy and cultural life.
