As a large agricultural country,China is rich in natural resources.Agriculture is one of the most strategic departments to support the national economy.Then looking for good crops is also very important for our agricultural development and economic development.The planting area of pepper in China is second only to Chinese cabbage and ranks second in vegetable crops.Its output value and benefit are much higher than Chinese cabbage and ranks first in vegetable crops.Therefore,this paper takes dry pepper as the research object.The samples are pretreated by ultrasonic extraction and microwave digestion respectively.The sample extract is analyzed qualitatively and quantitatively by GC-MS,GC?GC-MS and ICP-MS.the main research contents are as follows:Chapter I: This paper briefly summarizes the research background and significanceof this subject,summarizes the extraction methods,chemical components and pharma cological activities of dry pepper,introduces the principle and application of GC-MS,GC?GC-MS,ICP-MS and factor analysis,and puts forward the main research ideas a nd methods of this subject.Chapter 2: Firstly,optimize the extraction method of pepper sample components,obtain the best ultrasonic assisted extraction conditions through single factor experiment and orthogonal experiment,and then explore the conditions of GC-MS.Eight pepper samples were tested,and a total of 678 peaks(matching degree greater than 750)and 117 compounds were measured.The data were analyzed by SPSS and divided into three categories.17 characteristic compounds were screened.The use direction of different peppers is summarized,which is conducive to give better play to the role of food materials.Chapter 3: Firstly,optimize the extraction method of pepper sample components,obtain the best ultrasonic assisted extraction conditions through single factor experiment and orthogonal experiment,and then explore the conditions of GC?GC-MS.Eight pepper samples were tested,and a total of 1606 peaks(matching degree greater than 750)and 257 compounds were measured.The data were analyzed by SPSS and divided into three categories.30 characteristic compounds were screened.At the same time,the universality and reliability of the method were verified.This method belongs to the greater expansion and improvement of the database obtained from the gas chromatography-mass spectrometry test data,which is more conducive to the screening of different peppers and provides a reference for identifying the component differences of peppers from different producing areas,and provides a new idea for the identification of natural products.Chapter 4: the samples were pretreated by microwave digestion,47 elements in dried pepper samples were determined by ICP-MS,and the reliability of the determination method was verified by the correlation coefficient,accuracy,precision and detection limit of the standard curve.The results showed that the major elements mg and Ca in Pepper skin were higher than those in pepper seeds,and the content of Cd in samples exceeded the standard.The element detection results were analyzed by spss22 0 for principal component analysis and correlation analysis between elements,there are 31 characteristic elements,and 180 groups of elements have correlation.
