Brown rice Jiaosu is a functional grain fermented food with broad development prospects.Due to the complex food composition and long process flow,food production is often accompanied by serious environmental pollution.The application of life cycle assessment(LCA)method to brown rice Jiaosu can identify the stages of high pollution and high energy consumption in the production process of brown rice Jiaosu,which is of great significance for improving the environmental friendliness of brown rice Jiaosu products and realizing cleaner production.The main research contents of this thesis are as follows:1?The brown rice Jiaosu process of our research group was upgraded,and its physical and chemical properties were explored.The results indicated that under the condition of 30 ?,the content of ?-aminobutyric acid(GABA)reached the maximum value of 223.84 mg/100 g after 72 h germination,which was 87% higher than the content of GABA in ungerminated brown rice.The optimized production process of brown rice Jiaosu was as follows: brown rice was germinated at 30 ? for 72 h,dried at 40 ? for 4 h,crushed and passed through an40-mesh sieve to obtain germinated brown rice powder;mix the ingredients in the following proportions: germinated brown rice powder 15 g,wheat germ 10 g,15 g crystal sugar,0.5 g salt,0.3 g casein,250 g water,then gelatinized at 90 ? for 30 min;after cooling,added 1 g yeast and fermented at 30 ? for 3 h.2?The Ga Bi 9.2.1 Education software was used to build a "cradle-to-gate" life cycle assessment model for the brown rice Jiaosu production system.The CML2001-Jan.2016 model was used to transform the inventory data into the environmental impact potential value,and eight environmental impact types were considered: abiotic depletion potential(fossil)(ADP f),acidification potential(AP),eutrophication potential(EP),freshwater aquatic ecotoxicity potential(FAETP),global warming potential 100 years(GWP 100),human toxicity potential(HTP),marine aquatic ecotoxicity potential(MAETP),terrestrial ecotoxicity potential(TETP).The results indicated that MAETP,FAETP and TETP were the three types with larger impact potential;the stages that caused greater environmental impact in the system were the brown rice germination stage and the rice planting stage.3?The method of combining the data quality index and Monte Carlo simulation was used to carry out the uncertainty of the inventory data,then the sensitivity analysis and scenario analysis were performed on key data with greater uncertainty.The results indicated that ADP f,AP,GWP 100,HTP,MAETP were the most sensitive to the electricity consumption in the germination stage.FAETP and TETP were the most sensitive to the amount of brown rice,and EP was the most sensitive to the amount of wheat germ.The use of clean energy to generate electricity can effectively reduce the environmental impact of brown rice Jiaosu production.4?Three suggestions for improvement were put forward for the high pollution stage:developing efficient brown rice germination technology and advanced industrialized germination equipment;reducing the proportion of thermal power generation in China's power structure;increasing clean energy power generation;rationalizing the use of fertilizers and pesticides in the rice planting process.
