In recent years,the state attaches more and more importance to food quality and safety,and market supervision departments have higher and higher supervision requirements on food production and business entities.Competition pressure makes food production enterprises have more and more demands for internal management,brand building and cost reduction,and stronger awareness of preventing food safety problems.People’s pursuit of quality of life is gradually improved,and consumers attach unprecedented importance to the quality and safety of food and the right to know.Therefore,the establishment of food safety traceability management system is of great significance for meeting the regulatory requirements of the state and regulatory departments,the sustainable development of enterprises and the consumer demand,and providing comprehensive information,reliable platform and scientific system for the realization of food safety management.This paper takes chicken products as the research object and Y company as an example,and focuses on the following contents:1.The specific application of RFID radio frequency technology,two-dimensional code technology in the food safety traceability management system and the management and application of ISO22000,HACCP,GMP,SSOP and other basic principles of food safety in the system;2.Design and plan the safety traceability management system of chicken products,including the design objectives,design principles,implementation objects,users and responsibilities,functional module design and operation steps of the system;3.Chicken products safety traceability management system process analysis and information available,including raw material supply,processing,storage transportation,factory sales,the whole supply chain process analysis and the establishment of the monitoring system,through the study of the quality of chicken meat products safety hazard analysis,determine the key hazard factor index system of key elements of the system is obtained;4.Establish the database of chicken products safety traceability management system and input information.Firstly,analyze the database structure and requirements,and then design the database table;5.Information query,chicken products safety traceability management system through the design of the system platform to realize the platform of the query system,through the mobile terminal scans the qr code on the product packaging to achieve consumer mobile query,and finally the problem of food recall management analysis,including the classification of food recall and recall program management.Intention in this paper,through the design process from its source to the chicks breeding chicken products processing,and to the whole process of consumer food safety traceability management system,from the traceability information acquisition,input,query,the three perspective,based on the ISO 22000,HACCP,GMP,SSOP management of basic principle of food safety in the system and application of using RFID radio frequency technology and qr code technology,on the basis of the research on food safety traceability process through hazard analysis,the establishment of the database and query system platform to realize the traceability of meat products.Taking cooked chicken products as the research object and Y company as an example,this paper focuses on the following contents. |
