[Objective]China’s demand for edible oils and fats has been growing rapidly,and some food safety problems have been exposed.Through five kinds of edible oils sold commercially in Shanxi,as well as cakes,meat products,and nut fried goods,The safety indexes of 4 kinds of fatty foods in potato and puffed food were tested,the safety conditions of edible oil and fatty foods sold in Shanxi province were analyzed,and preventive measures were put forward for the safety hidden dangers and problems.Therefore,it provides theoretical basis for ensuring the safety of edible fats and fats and strengthening food safety supervision by relevant departments.[Methods]Extract some edible oils and fatty foods that are circulated in the Shanxi Provincial Market from January 2016 to December 2017.The edible oils mainly include soybean oil,peanut oil,sunflower oil,flaxseed oil,and sesame oil.Lipid foods mainly include cakes(cakes,moon cakes,dumplings),meat products(bacon,sauce,smoked barbecue,smoked ham),nut fried goods,potatoes and puffed foods(Potato,puffed foods).According to the National standards,15 kinds of food safety indicators are tested.[results]Among the unqualified foods tested in two years,the failure rate of edible oils in 2016 was 3.35%,cakes was 8.85%,meat was 4.03%,nuts were 11.43%,and potatoes and puffed foods were 7.14%.The cooking oil failure rate in 2017 was 1.98%,and the cake class was 2.52%,6.85%for meat,2.9%for nuts,and 3.03%for potatoes and puffed foods.Among them,the non-conforming items of edible oil are mainly acid price and peroxide value;The unqualified indexes in the cake mainly include the total number of colonies,coliform flora,mold,and acid price and peroxide value;The unqualified items of cured meat products and marinated meat products are nitrite,sorbic acid and its potassium salt,coliform bacteria;Unqualified item peroxidation value,talc powder and mold for nut stir-fry;The unqualified items of potato and puffed food are acid price and coliform flora.[Conclusion]There are safety problems in edible oil and fatty food in Shanxi province,so food supervision department should take measures to strengthen supervision. |
