China is rich in fishery resources and can provide sufficient market supply for the domestic and foreign markets.Statistics show that the total output value of the whole fishery economy of China in 2016 was 2.366229 trillion yuan, and the corresponding total output of seafoods was 69.01 million tons, ranking first in the world. In recent years, with the development of economy and the increase of residents' income, the consumption of food has increased rapidly, and the pursuit of food and clothing has gradually changed to the pursuit of nutrition and health, and has entered the stage of individualized demand. In process of the transition, the change of seafoods consumption is more obvious, especially the sustained rapid development of urbanization and the continuous accumulation of rural population into towns, which make towns become the key areas for seafoods consumption. Therefore,it is of great significance to study the factors affecting the consumption of seafoods of urban residents in order to promote the consumption of seafoods, expand the market of seafoods and adjust the production of seafoods in China. In order to make the content of this study more specific and in-depth,the data selection not only has 20 years of national macro statistical data, but also synthetically considers the regional differences of seafoods consumption, and selects the macro statistical data of Shanghai,Beijing and Xi'an.In the specific consumption structure research,we also refer to the microcosmic data of the research group's field investigation.Through the latest data,we use descriptive analysis and empirical analysis of the method to study. This paper is divided into four parts and six chapters for specific analysis:The first part is the basic part of this study, including the first chapter and the second chapter. The first chapter describes the purpose and significance of the research, domestic and foreign research status, research methods and data sources. Then by combing the previous literature to put forward the innovation of this paper, finally pointing out the shortcomings of the data sources.Chapter two focuses on the traditional economic theory, divided into two parts to introduce the relevant theory.First,it summarizes the basic theory of demand and the factors influencing consumption level, and secondly, summarizes the theory of consumer behavior and the factors influencing consumer behavior. The second part includes the third chapter, which is descriptive analysis of the study. We analyze the present situation of the consumption of seafoods in China by studying consumption level, consumption structure and consumption characteristics of seafoods in China. We conclude that the consumption level of seafoods in China has been steadily rising, but it is still insufficient;the gap between seafoods and the consumption level of substitutes such as meat and eggs is still clear;the species of seafoods consumed by residents are mainly fish, shrimp and crabs;residents are affected by the traditional eating habits, that tend to prefer intact seafoods, untreated seafoods, which still account for the majority of the original consumption;the regional and urban-rural differences in the residents' consumption of seafoods still exist. The third part includes the fourth and fifth chapters, which is the empirical analysis part of this study. The fourth chapter adopts the national statistical macro data from 1996 to 2015,uses the method of mathematical statistics and builds a double logarithmic model of influencing factors of seafoods consumption of urban residents in China, which concludes that the main factors affecting the consumption of seafoods of urban residents are aging, price and income.Among them, the consumption of seafoods of urban residents is negatively correlated with aging factors, negatively correlated with price factors and positively correlated with income factors. The fifth chapter adopts the macroscopic statistical data of Shanghai,Beijing and Xi'an from 1996 to 2015.Based on the double-logarithmic model of the influencing factors of urban residents' seafoods consumption in this cities,it is concluded that income, price, aging, urban population and urbanization are the main factors that cause the difference of seafoods consumption among different regions in China, and the higher the degree of aging in different regions, the greater the rate of change in seafoods consumption;there are more substitutes for seafoods in the central and western regions than in the eastern regions, resulting in greater price elasticity of seafoods in the central and western regions;the higher the income level in different regions, the smaller the rate of change in the consumption of seafoods;the higher the level of urbanization in different regions, the larger the rate of change in seafoods consumption. The fourth part is the conclusion of this study, including conclusions and policy suggestions.According to the above conclusions,in order to effectively improve the consumption demand of urban residents,we should not only formulate policy suggestions from a national perspective, but also adopt different and targeted policies and measures according to the differences of consumption level and consumption characteristics of seafoods in different regions.National policy suggestions: to increase the proportion of seafoods in deep processing,to develop large-scale and efficient aquaculture,to adjust the supply structure of seafoods at different consumption terminals, and to create marketing channels.Regional policy suggestions: the eastern region is in urgent need to improve the seafoods production access mechanism, the central region needs to increase the role of seafoods health promotion;the western region has stepped up the construction of channels for the circulation of seafoods and the improvement of residents' income and the quality of life.
