Food is the first necessity of the people.With the progress of society and the development of the time,food safety has become a worldwide topic.Luohe is the first "famous Chinese food city" in China.After more than 10 years of development,the food industry of Luohe has made great progress.The food industry has become the leading industry in Luohe.However,because of the relatively backward food processing level,the management level is not as good as the economic developed area,and the food safety problem is still serious.In this paper,taking the data of Luohe food safety sampling inspection as the research object,combining with the literature analysis,visiting investigation and questionnaire survey,this paper grasps the overall situation of food safety in Luohe,finds out the source of the existing food safety problems and puts forward the countermeasures,providing the basis for the supervision Department of the food safety supervision department.In 2016 and 2017,in Luohe,2821 batches of food,food,food and food were extracted from 28 kinds of food,which were tested by six aspects of microorganism,heavy metals,food additives,pesticide residue,prohibited substances and conventional physicochemical.The results showed that the overall qualified rate of food safety was 98.1% and the overall level was 98.1%.The qualified rate of food and beverage is high,and the qualified rate of food and beverage is high,which is 99.3%.It shows that the control level is high,and the qualified rate of starch and starch products,frozen drinks,convenience food,pastries,biscuits,condiments,and edible agricultural products is relatively low,so the key monitoring should be carried out,microorganism pollution and food additives are over.It is the most likely food safety problem to be used in a large scale,the detection of the disabled or the disabled,and the unqualified food occurs in small enterprises,small workshops and small fast food stores.Based on the analysis results of2016-2017 year sampling data,the risk factors affecting food safety are identified,and thehigh risk links are found in the food production and operation process system,which are mainly: poor handling and improper storage,poor production and processing environment,and not required for production and processing equipment.It is difficult to trace the source of cleaning,disinfection,abuse of food additives,food safety awareness of employees,confusion of management of production and business units.Through the above analysis and field investigation,drawing on the advanced experience of developed countries and regions,this paper puts forward the corresponding countermeasures for food safety supervision in Luohe,and promotes the change of supervision mode from post remedy to pre event prevention.The main contents are as follows: heavy point monitoring for high risk links and the introduction of specialty in the supervision team.Technical personnel;integrate testing resources,improve the level of detection;build the traceability system of food safety;strengthen the punishment of illegal punishment,establish a credit supervision system;strengthen the supervision role of the industry association;strengthen the publicity of food safety and encourage the participation of the citizens.
