Under the background of globalization,as for the development of catering industry,competition is not only from the same industry,but also brought by internationalization.It has become significantly important to win advantages in competitions so as to occupy the market,improve the enterprise competitiveness,obtain the development opportunity and realize a sustainable development.Strategic management is the combined development of traditional management accounting theory and strategic management thoughts,which is aimed at serving for enterprise strategic management to offer strategically related external information about customers,suppliers and competitors,and provide the strategic information system with enterprise internal information,in all,it is a complicated system for high-level strategic management.Based on strategic management accounting,the enterprise can be analyzed to search for the enterprise core competitiveness,confirm the development goal,adopt balanced score card and strategic map to turn enterprise strategy into enforceable tactics.On the basis of Guangzhou Restaurant a timed-honored brand of catering industry,the thesis has studied on the implementation of strategic management accounting.Besides,it has sorted the theory of strategic management accounting and method of performance evaluation,and offered related theoretical basis.The application of strategic management accounting consists of three stages-strategic analysis,strategic implementation and strategic evaluation.At the stage of strategic analysis,the thesis has adopted Michael Porter's Five Forces Model,combined with the operational features of Guangzhou Restaurant to analyze internal and external competition environments and then detect the existing problems in operation.During the period of strategic implementation,the balanced score card is used by enterprise to turn its long-term goal into specific and workable strategic goal according to its mission,value and vision,furthermore,from four dimensionalities like it will build up a causal relationship to turn workable strategic goal into specific index,so as toform a strategic map.The balanced score card is applied during the stage of strategic evaluation,by comprehensively taking the elements and effects of performance into consideration,the transformation from strategic goal to specific goal can be realized.Through the changes brought by the application of strategic management accounting and balanced-score-card-based evaluation performance research to Guangzhou Restaurant,it is expected to provide reference to the development of enterprises in catering industry.
