Objective : To master the dietary structure,food consumption and the content of common food pollutants(residues)of Wenzhou residents,carry out the risk assessment of dietary exposure,provide data for carrying out nutrition health education and nutrition improvement,and provide basis for relevant departments to implement food safety supervision and management.Methods : Descriptive methods were used.A total of 5287 people from 1689 households were investigated for food consumption.The method of discontinuous 3-day24-hour dietary review was used as the main method,and the method of 3-day weighing was used as the auxiliary method to collect the data of food consumption.845 rice samples,294 swimming crab samples,330 vegetable samples,212 animal meat samples,130 poultry meat samples and 70 egg samples from 11 counties(cities and districts)in Wenzhou were used for elemental cadmium,parathyroid pesticides(Permethrin,Permethrin,bifenthrin,Permethrin,fenvalerate),veterinary drugs(oxyfluthrin)Detection of residues of floxacin,norfloxacin,dapfloxacin,enrofloxacin,oxaquinic acid,sarafloxacin,pefloxacin,lomefloxacin,difloxacin,flumequine,tetracycline,aureomycin,tobramycin,doxycycline,ribavirin,amantadine,salbutamol,clenbuterol,ractopamine,terbutaline).Using EPI data 2.0,excel 2010 and SPSS16.0 software to input,sort and analyze the data,P < 0.05 indicates that the difference is statistically significant.According to the results of food consumption survey,the risk of dietary exposure of the above four kinds of food was assessed.The dietary risk of cadmium in rice andswimming crab was assessed by the percentage of PTMI value,and the daily dietary exposure(EDI)and food safety index(IFS)of pesticides in vegetables and veterinary drugs in animal food were assessed Results:The intake of Cereals,potatoes,vegetables,fruits,livestock and poultry were394.8g/standard person day,273.4g/standard person day,180.0g/standard person day,71.7g/standard person day,78.4g/standard person day,35.5g/standard person day,29.8g/standard person day,respectively.In addition to the fruit intake and the difference between urban and rural areas,the intake of the remaining kinds of food in Wenzhou City was higher than that in urban and rural areas,and the difference was statistically significant.Aquatic products exceed the reference intake requirements of Chinese dietary guidelines,while Cereals,potatoes,livestock and poultry meat,soybeans and nuts meet the reference intake requirements,while vegetables,fruits and eggs do not meet the reference intake requirements.The average cadmium content in 845 rice samples was 0.076mg/kg,the median was 0.057mg/kg,the detection rate was 94.44%,and the over standard rate was 6.75%.The difference between the monitoring levels of Cd content in rice was statistically significant(P = 0.000).The average content of cadmium in 220 swimming crab(whole crab)is 1.72mg/kg,the median is 1.1mg/kg,the highest content is 10.1mg/kg,the detection rate is 98.64%(217 / 220),the over standard rate is 70.45%(155 / 220);the cadmium content,detection rate and over standard rate of crab paste(yellow)in 74 swimming crab(divided into three parts)are all in the other two parts.In 330 vegetables,the detection rate of pyrethroids was 26.36%(87 / 330),and the over standard rate was 0.91%(3 / 330).The detection rate and over standard rate of pesticides were different in different seasons and different kinds of vegetables,but only in different kinds of vegetables,the difference was statistically significant(P =0.001).Six of the seven pyrethroid pesticide were detected,and two of them exceeded the standard.The detection rates of antibiotics in poultry meat and eggs were 12.65%(21 / 166),20.00%(14 / 70),antiviral drugs in poultry meat and eggs were 4.00%(2 /50),12.00%(6 / 50),stimulants in livestock meat were 0.79%(1 / 126),and illegal drug clenbuterol was detected.The average dietary exposure of cadmium in 845 rice samples and 220 swimming crab samples accounted for 26.40% and 32.13% of PTMI respectively,suggesting that the average health risk of the population was low.The average value of food safety index of 330 vegetables was IFS = 0.01 < 1,which indicated that the health risk of the vegetables in this study was low.Ifs = 0.12,0.025 <1 in the average value of antibiotic food safety index in 80 poultry meat and 70 eggs,indicating that the health risk of poultry meat and eggs in this study is low due to antibiotic residues.Conclusion : The dietary structure and food consumption of Wenzhou residents are basically reasonable,except for the intake of staple plant food which does not reach the reference intake,the rest of the food intake reaches the reference intake.The content or residue of main pollutants in several kinds of common food in Wenzhou is not low,but the exceeding standard is not obvious.The main reason is that the exceeding standard rate of cadmium in swimming crab is high.The residents' health risk caused by these kinds of food dietary exposure is low,but the health risk caused by food and pollutant dietary exposure outside this study should be paid attention to.It is suggested that the regulatory authorities should further carry out the health education of residents' diet and nutrition,advocate a reasonable diet and healthy lifestyle,strengthen environmental protection and management,and monitor and assess the risk of food safety,comprehensively consider the development of economic industry,customs,culture and other factors,and take further risk management measures to ensure the healthy development of the industry and the public health Healthy.
