Objective:To master the current situation of dietary structure and intake level of various nutrients of residents in communities of Jiangxi Province,to objectively evaluate the nutritional and health status of residents in Jiangxi Province and the existing problems,and to provide support for formulating the recommended dietary intake of residents in Jiangxi Province,at the same time to improve the nutritional status of residents in Jiangxi Province,to promote the health of Jiangxi construction to provide a basis.Methods:By using multistage stratified cluster random sampling method,a total of 2 582 residents aged 3 years and above were randomly selected from 842 households in 7counties of 4 cities in Jiangxi Province.The contents of the survey include family and personal basic information survey,personal food consumption,etc.The dietary survey was conducted by discontinuous 3-day 24-hour retrospective method combined with weighing method.Food consumption was analyzed by standard person daily food consumption,standard person coefficient and national standards of various food nutrients.The data of dietary structure,heat energy and nutrients intake were calculated based on the average amount of the survey population,and the independent sample t test was used for comparison between groups.Result:(1)The average daily food intake of Jiangxi residents was 889.06 g,including292.42 g for cereals,18.53 g for potatoes,26.88 g for legumes and 227.11 g for vegetables,the average fruit intake per day was 58.23 g,poultry meat 19.09 g,animal meat 110.61 g,aquatic products 44.97 g,milk and its products 25.3 g,eggs and its products 20.87 g,fats and oils 33.25 g,salt intake 7.31 g.(2)The average daily energy intake per person was 2012.8 kcal,the average protein intake was 81.19 g,the average carbohydrate intake was 277.37 g,and the average fat intake was 86.19 g.(3)The proportion of people in Jiangxi Province who did not meet the dietary fiber recommendation for Chinese residents was 95.3 percent,,the average intakes of vitamin A,vitamin B1,vitamin B2,vitamin C and vitamin E were 83.1%,93.4%,79.72%,80.34%.(4)Cereals accounted for 52.8 per cent,animal products for 15.8 per cent and edible oils for 18.2 per cent of the main food sources of energy for urban and rural residents in Jiangxi Province.The proportion of energy provided by protein,fat and carbohydrate was 16.24%,38.64% and 51.39% respectively.Conclusion:The energy and protein intake of urban and rural residents in Jiangxi Province were basically satisfied.The consumption of animal foods such as meat and aquatic products was in line with the dietary recommendations.However,the unreasonable dietary structure of high salt and high oil diet and low intake of fruits and dairy products resulted in insufficient intake of vitamin A,B1,B2,calcium and zinc in the intake of main nutrients such as micronutrient.
