Based on the analysis of food sampling report data from 2015 to 2017 in Jilin Province,the present situation of food safety in Jilin Province in recent years is understood,and the existing problems and key points of supervision are summarized,and the countermeasures to ensure food safety are explored.By means of literature research,data analysis and descriptive research,this paper understood the concept of food safety,analyzed the data of food sampling,and reflected the current situation of food safety.This paper edits and processes the sampling data by Microsoft Office 2010 software,and analyses the specific situation of the unqualified items in Jilin Province.According to the frequency of unqualified food items,27 kinds of food in Jilin Province were analyzed,including edible oil,oil and its products,meat products,condiments,vegetable products,beverages,alcoholic drinks,cakes and aquatic products.Food problems in Jilin Province are manifested in five categories: food additives,microorganisms,physical and chemical indicators,pollutants and other categories(residues of agricultural and veterinary drugs,illegal addition,labeling).Among them,food additives,microorganisms and physical and chemical indicators are the three most unqualified items.The main unqualified factors of food additives are preservatives,sweeteners and colorants,and the frequency of unqualified detection of vegetable products and alcoholic drinks is more.Microbial disqualification factors are concentrated in the total number of colonies and fungi,which are widely distributed in meat products and pastries.The unqualified factors of physical and chemical indexes are mainly the unqualified alcoholicity of alcohol,the unqualified acidity of edible oil and oil products.According to the analysis of Jilin Province's food sampling report from 2015 to 2017,the food safety problems in Jilin Province are mainly reflected in three aspects: first,there are problems of violating national standards in food testing items;second,there are problems of failing to meet the standards in food sampling items;third,there are problems of exceedingthe standards in food sampling items.In view of the above problems,three suggestions are put forward: strictly enforcing the national food safety standards;strengthening the supervision of substandard foods;and preventing food additives from exceeding the limits prescribed by the standards.
