Objective: To understand8major chemical pollutants and harmful factorssituation in food of one city,which included lead,cadmium,mercury,aluminum, sodium cyclamate, saccharin sodium, nitrite andaflatoxin B1, B2, G1, G2, M1,and provide the basis for food safetysupervision.Method:Sampling method: We used multi-stage stratified sampling. The firstlayer was monitoring stations, the second was the extraction point-of-sale,and the third layer extracted all kinds of food.Monitoring network: The monitoring network based on the existingphysical and chemical laboratory in Centers for Disease Control.We setsampling and testing for monitoring stations in24administrative areas.Analysis method: SAS9.13was used to analyse the collectedinformation, mainly included descriptive and univariate factor analysis,Fisher exact probability method was used when theory frequency was lessthan1,P <0.05was thought differences with a statistical significance.Results:1.The total qualified rate of food in the city was94.93%(2623/2763),the unqualified rate of8kinds of substance were as followed: lead was5.6%(35/624), cadmium was3.27%(20/611), mercury was1.6% (10/622), aluminum was24%(24/100), aflatoxin was0%(0/140), sodiumcyclamate was12.08%(18/149), saccharin sodium was8.16%(12/147),and nitrite was3.89%(7/180).2. Comparison results with national average:Exceed standard rate oflead in vegetables was13.6%, higher than the national average of6.8%.Exceed standard rate of lead in eggs was6.64%, higher than the nationalaverage of5.8%. Exceed standard rate of cadmium in grain was5.46%,higher than the national average of2.1%.Exceed standard rate of cadmiumin meat was6.6%, higher than the national average of2.0%. Exceedstandard rate of aluminum in deep-fried dough cake was82%, higher thanthe national average of64.5%. Exceed standard rate of sodium cyclamatein sauce salted vegetable was11.3%, higher than the national average of10.2%. Exceed standard rate of sodium cyclamate in wine was33.3%,higher than the national average of26.6%. Exceed standard rate ofsaccharin sodium in wine was32.1%, higher than the national average of16.6%.3. Exceed standard rate of lead, cadmium in pig kidney, mercury,sodium cyclamate in sauce salted vegetable and average contents ofaluminium in food products in2010, were lower than those in2009, andthey were declined. The average contents of aluminium in fried foods in2010was2.46times as much as that in2009, and they was on the rise.4. Comparison results of urban and rural, and comparison results of big city,medium-sized and small cities: Exceed standard rate of lead infood of city was4.0%, lower than that in rural areas of10.6%. Exceedstandard rate of lead in food of big city was9.7%, and those inmedium-sized and small cities were5.5%and3.9%. Exceed standard rateof cadmium in food of city was2.7%, belower than that in rural area of5.6%. Exceed standard rate of mercury in food of city was0.8%, belowerthan that in rural area of4.6%. Exceed standard rate of mercury in food ofbig city was3.9%, and those in medium-sized and small cities were2.8%and0.3%. Exceed standard rate of sodium cyclamate in food of big citywas0.0%, and those in medium-sized and small cities were10.1%and21.7%. Exceed standard rate of saccharin sodium in food of big city was0.0%, and those in medium-sized and small cities were0.0%and26.1%.All of above differences in univariate factor anaysis were statisticalsignificant.Conclusion: we should put our concerning on the food pollution of thiscity. The regulators should strengthen the monitoring of the various typesof food and reinforce the safety regulation of food, and guide the public tothe food consumption correctly with scientific prewarning information.
