Research On The Key Technology Of Fresh Apple Juice Vending Machine

Apples have high nutritional value and huge domestic production.In recent years,freshly squeezed apple juice has gradually become popular as a health drink.Vending machines have a large share in the beverage sales market,but there have not been any fresh squeezed apple juice vending machines.This article studies the technical difficulties of the freshly squeezed apple juice vending machine,realizes the apple juice peeling,apple pitting,automatic juice and other juice processing technologies of fresh apples,and designs a fully automatic freshly squeezed apple juice vending machine.The main research contents are as follows:(1)The characteristics of various juicers are analyzed,and the method suitable for apple juice is selected.Experiments were carried out on the juice yield and juice quality of three juice extractors: crushed juice extractor,squeezed juice extractor and spiral juice extractor.The results show that the maximum juice extraction rate of the spiral juicer is 47%,the L * value of the extracted juice is 28.45,the a* value is 1.99,and the b* value is 5.19.Juice has low oxidizability and the best color.The soluble solids have the highest content of 13.5%,the lowest titratable acid content is 0.16%,the highest solid acid ratio is 85,and the apple juice has the best flavor.The method is suitable for processing fresh apple juice.(2)The Browning rate of fresh apple juice obtained by spiral juicing method and squeeze juicing method was analyzed,and the Browning rate of apple juice pressed by spiral juicing machine is lower than that of squeeze juicing machine.The Browning index of spiral juicer increases gradually with time.The Browning index is the highest when the time is 30 min,and the Browning index is at a low level when the time is 0-1min.Therefore,it is necessary to control the processing time of apple juice within 1min to ensure its quality.(3)The processing process of fresh apple juice was developed,and the operation time distribution scheme of the fresh apple juice vending machine was given,and the operation time was optimized.After the optimization,the operation time of the whole juicing scheme is 66 s,and the completion time of the apple juicing is controlled within 1min(51s).(4)According to the action characteristics and use requirements of the fresh apple juice vending machine,the modular design method is used to design the overall layout and modules of the fresh apple juice vending machine,including five key modules: conveying module,inserting module,nuclear module,juice module and cup and cap module.At the same time,the flow design of the control system was completed.(5)The three-dimensional model of the whole machine was established,and the three main force mechanisms including the inserting mechanism,the peeling mechanism and the juice mechanism were analyzed by finite element method.The maximum value of the total deformation of the insertion mechanism is 0.0995 mm,the maximum value of the stress is 39.01 MPa,and the safety coefficient is 5.3.The maximum value of the total deformation of the peeling and dividing mechanism is 0.17129 mm,the maximum value of the stress was 36.25 Mpa,and the safety factor is 5.7.The maximum value of the total deformation of the juicer is 0.14118 mm,the maximum value of the stress is 57.606 Mpa,and the safety coefficient is 3.6.The strength and stiffness of the whole machine are guaranteed.(6)The prototype machine was trial-manufactured,and the performance tests of the conveying mechanism,the inserting and peeling mechanism,the juicing mechanism and the cupping and capping mechanism were carried out,and the five key mechanisms were all able to complete the designed actions within the prescribed time limit.The operating test of the machine shows that all the mechanisms can cooperate and operate in a coordinated manner,and all the design actions can be completed.The operation time is in accordance with the design time requirements,which ensures the excellent quality of apple juice.The research of this paper solves the technical difficulties affecting the promotion and application of fresh apple juice vending machine,provides theoretical and technical support for the design,promotion and application of fresh apple juice juicer for apples,pears,peaches and other similar fruits.
