The traditional Chinese dry cured ham is mainly processed by human under natural climate conditions,the products have many problems such as high salt content,long production cycle,hygiene and safety.In order to promote the development of China’s ham industry,the technology and equipment need to be modernized.In this paper,taking rectangular ham as the research object,the modern production equipment was designed according to the new production technology,so as to realize the unmanned and automatic production of ham.The main contents of this paper are as follows:1.A trolley for ham transfer was designed and trial-produced,using automatic transfer instead of manual transfer to avoid external pollution.The suspension mechanism of the salting device was redesigned,and the groove suspension device was used with the correction strip to realize the automatic connection between the salting device and the transfer trolley.Through the experiment,the non-rotating transfer scheme was selected,and the mechanism was designed,which used motor-driven chain and hanging rod to realize ham loaded and unloaded.By analysis,the RGV driving scheme was selected,and the mechanism was designed,which can move along the rail.The guide rail of the trolley was designed,which connected by hinge to realize bend of the guide rail,to ensure the opening and closing of the fermentation warehouse door.2.A coating device for ham protective coating was designed and trial-produced,using spray coating protection instead of high salt corrosion protection to effectively reduce the salt content of ham and avoid contact pollution.Through the experiment,the external mixing nozzle was selected,and its installation position was designed,in order to ensure that the coating can be applied to the whole surface of ham.By comparing,the mobile coating scheme was selected and the mechanism was designed,using the synchronous belt driven by motor to control the nozzle moving vertical and horizontal at a uniform speed,so as to achieve the uniform coating of hams in the group.the pneumatic system of the coating device was designed.The gas inlet pressure of the nozzle was determined to be 0.3 MPa and the material inlet pressure to be 0.1 MPa through the experiment.The connection design of the air circuit and the selection of relevant components were completed to ensure the smooth operation of the nozzle.3.A ham hanging shelf was designed to ensure the automatic connection of ham transfer,coating and fermentation processes,and realize the even fermentation of ham.A variable temperature fermentation warehouse was designed,in order to get rid of the dependence on the natural climate and ensure the quality and safety of ham fermentation.4.The automatic ham production control system was designed to realize the automation of ham production process.A monitoring module based on machine vision was designed on the transfer trolley to detect the transportation status of ham and avoid the loss caused by abnormal transportation.The transfer trolley,coating device,air conditioner and shelf control system based on PLC were designed,in order to realize the automation of the transfer,coating protection and variable temperature fermentation processes of ham. |
