Although the quality and safety level of aquatic products has been steadily improving in recent years,the situation of poisoning caused by excessive biogenic amine is still occurring.Therefore,it is urgent to study the changing rules and risk assessment of biogenic amines in aquatic products,so as to ensure the quality and safety of aquatic products.The effects of different storage temperature,storage time and pretreatment on the change of biogenic amines in mackerel and blue circle were studied.The changes of biogenic amines,volatile base nitrogen and total colony,and the correlation of biogenic amines to TVB-N and total colony of TVB-N,and the total number of colonies under different temperatures were studied.The main results are as follows:The experiments was to explore the effects of different temperature and pretreatment on the changes of biogenic amines of mackerel,using high performance liquid chromatography(HPLC)method to analysis the change of eight kinds of biogenic amine and the total content of biogenic amines of the whole fish and gutted fish under different temperature storage.The results showed that the main biogenic amines of mackerel are histamine,putrescine,cadaverine,tyramine.With the increase of temperature,the total content of biogenic amines of the whole fish and gutted fish were increasing rapidly.At 0,4,10,15,20,25 and 30 ? storage after 1 d,the total amount of the accumulation of biogenic amines in fish were 40.34,93.44,107.95,73.39,119.99,4649.90,119.99 mg/kg.At 0?4?10?15?20?25 and 30 ? storage conditions,histamine content of whole fish in more than the state's high histamine fish 400mg/kg safety limits of the time were 12 d,5 d,4 d,48 h,36 h,15 h,14 h.The accumulation of histamine was 13.45 mg/kg at-18 ? for 6 months.In addition,the evisceration can delay the formation of biogenic amines..At-18?0?4?10?15?20?25 and 30 ? storage conditions,the extent of reduction the final accumulation of total biogenic amines after evisceration was 14.22%,39.79%,13.83%,29.06%,22.60%,13.56%,26.13%,21.26%,respectively.Therefore,low temperature and evisceration can effectively control the formation of biogenic amines in mackerel to prevent corruption.This study provides a reference for the effective control of production of biogenic amines of mackerel.The biogenic amines and volatile basic nitrogen(TVB-N)and total viable count of commercially available raw tuna and salmon and the correlation between the changes of biogenic amines and TVB-N,total viable count under different temperatures were studied.The results show that the tuna and salmon the most obvious changes in biogenic amines as histamine,putrescine,cadaverine,tyramine and tryptamine,phenylethylamine,spermidine and spermine in small change.The temperature has a great influence on the biogenic amines in tuna and salmon.The content of histamine,putrescine,cadaverine,tyramine under ice storage was lower than that in other temperatures.After 14 d of histamine,putrescine,cadaverine,tyramine content of Tibet tuna ice were 29.22,13.08,22.75,72.56 mg/kg,and the content of histamine,putrescine,cadaverine,tyramine 25? after storage for 2d were 2848.36,147.41,66.1,156.84 mg/kg.After 14 d of histamine,putrescine,cadaverine,tyramine content accumulation salmon ice were 70.36,43.81,160.12,61.69 mg/kg,and the content of histamine,putrescine,cadaverine,tyramine 25 ?after storage for 2d were 252.17,361.18,718.89,314.23mg/kg.In tuna and salmon,putrescine,cadaverine,histamine,tyramine content and TVB-N value,total viable count showed significant correlation(r =0.767~0.988,0.754~0.992 respectively),therefore to generate the decryption and temperature,microorganism and protein of biogenic amines in tuna and salmon is closely related.This article is for the consumer to eat the safe and high quality tuna and salmon,and to provide a certain theoretical basis for the deep processing of tuna and salmon.Based on the 8 biogenic amines obtained from 200 fish samples sold in Guangdong Province,and the dietary consumption data in the survey report of Chinese residents' nutrition and health status in 2002,the risk assessment and early warning model was used to evaluate fish biogenic amine dietary exposure,and the risk assessment of fish biogenic amines in eastern Gou Jianguang Province The dietary exposure assessment model has found that some samples have more biogenic amines than the domestic and foreign standards.The monthly total biogenic amines in rural and urban areas of Guangdong province are 3.97 mg/kg~6.43 mg/kg,and the food safety index is far less than 1,so the risk is within the controllable range,but this is just a simple one.The evaluation is very uncertain.It is suggested that the government departments should strengthen the detection of biogenic amines in aquatic products,and establish more standards for biogenic amines as soon as possible.
