Soybean oil is the main edible oil in northeast in China.It is the daily food .So the quality and safety of soybean oil could be the most important effect for human health. Quality of packaged soybean oil would be changing because of the long circulation time and storage.And the shelf life of soybean oil would be shorten or deteriorated in shelf life.The research studied that the changes rule of soybean oil quality and predited storage quality by using the neural network. The quantitation risk assessment of significance hazard in soybean oil was carried out.And quality and safety control system of soybean oil was estabilshed by the result of quantitative risk assessment and HACCP to apply for the related enterprise, and to the guarantee Soy bean oil product safe quality.Packaged soybean oil were carried out hazard analysis during the stock,transportation, sales and consumption entire process.We obtained the changes rule of soybeanoil quality and significance hazard by using the random sampling and the laboratory storage samples determination. The significance hazard in the qualitative index was the peroxide value and the acid value exceeded the allowed figure in shlef life, the secure index was the Benzo(a)pyrene exceed the EU(EC) No 208/2005.A Back Propagation model of soybean oil storage quality was established by MATALAB neural network toolbox.The BP neural network model which was used the experimental testing could predict the changes rule of the peroxide value and the acid value.And we could use this model to monitor soybean oil quality in order to guarantee edible safety.We investigated transportation and the sale of soybean oil as well as the consumption of soybean oil in Daqing.A model was constructed that combined the variation of peroxide value and the acid value during the period of circulation.A risk assessment model of soybean oil oxydation estabalished by using the risk analysis software @RISK4.5 during the period of circulation.The result indicated that the probability of exceeding the standard of the peroxide value is 1.7%,the probability of exceeding the standard of the acid value is 6.61%.Family storage time of soybean oil was the biggest risk correlation according to the sensitive analysis.A quantitation risk assessment of Benzo(a)pyrene in soybean oil was carried out by Monte Carlo in risk analysis software @RISK4.5 and investigation questionnaire and random sampling determination.As a result, Benzo(a)pyrene in soybean oil was predicted to above a threshold level of 6.2╳10-3μg/kg·d in 0.71% and in the heated soybean oil was 1.75%. So excess individual lifetime cancer risk of 10-6 induced by Benzo(a)pyrene was 0.71% or 1.75% respectively. The result indicated that heating soybean oil could increase the exposure concentration of Benzo(a)pyrene. According to the sensitive analysis,both daily intake soybean oil and concentration of Benzo(a)pyrene was the biggest risk correlation.Quality and safety control system of soybean oil was estabilshed by the result of quantitative risk assessment and HACCP including risk intervention study ,monitoring process and so on.
