In recent years,with frequent incidents of food safety,wide spread through the internet and continual reports,food safety issues have attracted considerable public attention.However,the researches show that consumers are very concerned about food safety,but their recognition is divergent.The foodborne disease is one of the important aspects of the food safety problem,the information of WHO showed that,four to six billion foodborne disease cases occurred each year around the world,and the number is keep increasing.Thereinto,about one billion people suffered from diarrhea each year,and about 70% of which were caused by consumption of food contaminated by microorganisms.Therefore,larger potential safety hazard exists in food contaminated by microorganisms.This project is mainly to investigate the consumers’ awareness of food safety and food storage methods in families,and the microbial contamination status of the refrigerated pork in home,in order to provide a scientific basis for popularizing food safety knowledge and pork storage at home.Methods: Questionnaires were given to consumers to ask for food safety issues and their usual handling ways of the food;in addition,a total of 50 samples of raw pork meat were collected in supermarkets and farmers’ markets in Haidian District,Beijing.All samples were separated into two aliquots equally.One aliquot was brought back and detected in lab directly,and the other one was kept in domestic refrigeration for 18-24 huntil analysis.Microbial testing slip was used to detect Aerobic Plate Count,Coliforms,Staphylococcus aureus,Salmonella spp and Listeria monocytogenes.Then analyze the changes of Aerobic Plate Count,Coliforms and the sample numbers polluted by each pathogenic bacteria of the raw pork before and after refrigerated storage.Results:(1)More attention was paid by consumers to illegal drugs(80.2%),residue of veterinary drugs(46.5%),counterfeit and inferior commodities(38.5%),but less attention was paid in microbial contamination(32.0%).(2)After domestic refrigerate,the number of Aerobic Plate Count and Coliforms in the pork were significantly increased.Meanwhile,the number of samples polluted by each of the three pathogenic bacteria was increased,especially for Staphylococcus aureus and Listeria,significant differences were detected.Conclusions:(1)Although concerned about food safety extremely,but consumers’ recognition is divergent.More attention was paid to chemical contamination factors such as illegal drugs,residue of veterinary drugs consumers,while less to biological pollution factor such as microbial contamination;Household handling ways could increase potential safety hazard of food during the process of food consumption,and that food safety acknowledge should be propagandized appropriately.(2)After domestic refrigerate,there will be potential microbial contamination risks in the raw pork.In order to ensure the safety of people’s diet,families should use the refrigerator correctly to reduce the possibility of microbial contamination and reduce the occurrence of foodborne diseases.
