In recent years,with the rapid development of social economy and the improvement of people's living standards,tourism has gradually become an indispensable basic needs of human life.In today's society,people not only pursue food and clothing problems but also to support the spirit of the money to travel.Therefore,tourism-also known as "smokeless industry"-creates a steady development that can drive the whole economic chain.Tourists not only pursue the traditional form of tourism,but also hope to improve the cultural knowledge and strengthen their participation and experience in the process.Food tasting is a new form of tourism.In this,visitors not only can enjoy their own participation and experience through food tasting and a variety of cooking related activities,but also to improve their historical and cultural knowledge of their destinations.This is conducive to the development of local culture and heritage,and has an important role in the development of tourism.Vietnam due to the long and narrow terrain,form rich and varied food culture characteristics,through diachronic changes,exchange and integration,eventually converges into the Vietnamese food culture,while preserving the local traditional delicacies.Vietnam's Capital Hanoi is no exception.The essence of Hanoi cuisine is reflected in the way the dishes are cooked,the taste of the food and the emotion between the diners and the chef.Every dish of Hanoi cuisine has a distinctive flavor and unique charm.It is not only the usual food,but also the art of cooking.Therefore,how to develop the resources of Hanoi tasting food for the development of the Vietnamese tourism is a hot topic now.This paper,through the literature search,data collection and on-the-spot investigation of Hanoi tasting food tourism resources,materials,summarizes the characteristics of tourist resources of Hanoi tasting food,tries to find out the characteristics of Hanoi tourism scientific and practical delicacy tourism resources development strategy.This paper is divided into six chapters.The first chapter introduces the research background and significance,literature review,research method.The second chapter describes the theoretical study of the food tourism:the concept,theoretical basis,important features and basic functions of gourmet tourism.The third chapter analyzes the elements and characteristics of Hanoi cuisine tourism resource.The fourth chapter analyzes the current situation and problems of the development of Hanoi tasting food tourism resources.The fifth chapter describes the development of Hanoi food tourism strategy,including:the principle of development,market positioning,spatial distribution,diversity of products,marketing,infrastructure,personnel training,and designed a few fine lines of tasting food tourism.The sixth chapter is the conclusion and prospect.
