Food safety incidents have occurred frequently during recent years,because of which food quality and safety issues have become the focus of social attention,so that consumers' quality awareness is becoming higher and higher.Dairy,represented by milk,plays an important role in the human diet.At the same time,the requirements of consumers and the market requirement about the dairy quality constantly improve,with which quality management of dairy enterprises should change.As a new quality management concept,the quality chain theory provides another perspective for the quality management of dairy even the whole food industry,to break through the bottleneck of management and realize the quality of products that meets the social expectations.As a complex system,dairy quality chain emphasizes integrity and coordination of the dairy quality formation.The interaction among agents,quality activities and quality factors brings the coupling in the system.The coupling effect is important driving force for the healthy development of the dairy quality chain system,so the coupling effect is an important content of the dairy quality chain management.In this paper,we have a preliminary exploration of the dairy quality chain.The study focuses on the coupling effect of the dairy quality chain.Firstly,we introduce the related theories of the quality chain,based on which,we analyze the formation process of the dairy quality chain.After that,we summarize the main coupling forms of dairy quality chain,referring to the theory of coupling effect.According to the form of the coupling between quality process,using survey data on the chain nodes' importance evaluation,we identify dairy quality chain key chain nodes by a adjusted identification method after analyzing the main identification methods of a quality chain,design the graph of dairy quality chain key chain nodes' coupling mechanism and explain the coupling mechanism of dairy quality chain key chain nodes.In terms of the form of the coupling among the 4M1E subsystems consisting of the quality influence factors,the coupling degree model is constructed based on the system variation coefficient,which reflects coordination of system.Then we improve the model by using the gray correlation degree from the perspective of the correlation in the coupling effect and build the coupling effect measurement model based on the variation coefficient and the gray correlation degree.Finally,we set up an index system of measuring the coupling effect of dairy quality chain,and make a case study of a dairy quality chain's coupling effect measurement by a company's data.The study of quality chain is still in the primary stage,not yet mature,leaving plenty of research space.This paper expands the research scope of quality chain and food quality chain,which is an innovative exploration.The identification method of key chain nodes and the coupling effect measurement model established in this paper,which using mature methods and tools of other subjects provide a reference for the study of dairy quality chain and other quality chain.
