Objective: To investigate the effects of fresh apple,juice and pulp on postprandial serum concentrations of glucose(Glu),insulin(Ins),lipids and lipoprotein lipids in healthy subjects,respectively.Method: A 3*2 randomized crossover,study was conducted,and subjects consumed300 g fresh edible apples,same amount of edible apples made apple juice and apple pulp,respectively.Besides,subjects consumed steamed bun(75g),egg(50g)and water(100mL)as breakfast in each flowing-day.The wash period was 7-days.The blood samples were collected at 0(fasting state),15(from first bit),30,60,120 and 180 min,respectively.The serum concentrations of Glu,Ins,triglyceride(TG),total cholesterol(TC),high density lipoprotein cholesterol(HDL-C),low density lipoprotein cholesterol(LDL-C),apolipoprotein A1(ApoA1),apolipoprotein B(ApoB)were measured using an automatic analyser.Meanwhile,the hungry/satiate felling was recorded.Results:1.The postprandial serum concentrations of Glu is significantly higher in fresh apple group than in juice group at 120 min(p<0.05),and in juice and pulp groups at 180 min(p<0.05),respectively.The postprandial AUC of Glu in fresh apple group is significantly higher than in juice group and pulp group.2.No significant difference were observed among the three groups with respect to postprandial serum concentrations of Ins.3.No significant difference were observed among the three group with respect topostprandial serum concentrations of TG,HDL,TG-AUC and TC-AUC.4.No significant difference were observed among the three group with respect to postprandial serum concentrations of TC and LDL;The postprandial 3h AUC of TC and LDL in fresh apple group and pulp group are higher than juice group.5.No significant difference were observed among the three group with respect to postprandial serum concentrations of ApoA1 and ApoB,but the postprandial 3h AUC of Apo in fresh apple group and pulp group are higher than juice group.Conclusion: The present results indicate that postprandial serum Glu concentration is more steady for subjects consuming fresh apple compared with apple pulp or juice.
