The restaurant kitchen environment quality is directly related to the physical and mental health of staff.And in our country there is still a lack of researches about the working environment of the restaurant staff,especially for high temperature of restaurant kitchen in summer.In recent years,many heatstroke incidents of the restaurant staff have aroused wide public concern.The researches about the high temperature problem of restaurant kitchen is significant to strengthen health inspection management and protect physical and mental health of the restaurant staff.In the thesis,select the restaurants in Xicheng district of Beijing as research object,use cross-sectional study method,select the required restaurants sample size(62 < sample size <74),obtain workplace layout distribution,restaurant kitchen area size,manpower allocation and exposure time of the restaurant staff by field investigation.Use the WBGT-2006 index instrument to measure the temperature of high-temperature position in restaurant kitchen during hottest July and August and make a statistic analysis on the data.Then carry out the comprehensive analysis and evaluation on the temperature of restaurant kitchen by reference to the national “Exposure limit of the harmful factors in workplace”(GBZ2.2-2007).The result of field investigation indicates that in the four investigation positions,only the temperature of charcoal stove position is in good condition and the over standard rate is 25%.But the over standard rates of the rest of roast duck position,hearth position and stewing position are 71%,69% and 60% that are all more than 50%.The correlation analysis about restaurant kitchen area size,blowing and exhaust equipment and exposure time rate affecting restaurant kitchen temperature shows that restaurant kitchen area size and the temperature of four investigation positions have a negative correlation,blowing and exhaust equipment and the temperature of hearth position and stewing position have a notable negative correlation,exposure time rate can affect the temperature of charcoal stove position significantly and they have a notable positive correlation.According to the temperature exceeding standard condition of the four investigation positions and the correlation between the temperature and the above-mentioned factors,give suggestions about the way to protect the staff in the four investigation positions from high temperature and the temperature influencing factors in the four investigation positions that need focus on investigation and supervise.
