[Objective] To analysis the effect of home kitchen hygienic status and resident’s hygiene habit on health status of residents, we investigated the home kitchen hygienic status and resident’s hygiene habit in kitchen in Shanghai. This would offer basic data for improving home kitchen hygiene.[Methods] The cross-sectional investigation was taken in2009. The objects were selected according to stratified random sampling, and they were investigated by questionnaire to collect the information of kitchen cleanness, resident’s hygiene habit, diarrhea and else. The home kitchen hygienic status were assessed by observation of the investigators. Samples were collected by zymotechnics reference to GB14934-94in bowls, dishes, chopping blocks, chopsticks and dishcloths in300investigated families, and the samples were determined quantitative analysis of the coliform group reference to GB4789.3. Data was input into Epidata database. Statistic method:data was compared by x2inspection. Correlation analysis was taken by Spearman’s correlation coefficient for ranked data.[Results]986families were practically investigated, the average area of home kitchen in Shanghai was5.4±4.2square meter and the average illuminance was250±128.79lux.314of the investigated objects were male and672were female, education degree of the objects:77were illiteracy,175had elementary school degree,391had junior high school degree,248had senior high school degree and95have Junior college degree or above. The average age of the objects was58.6±12.4years old.59.4%of extractor hoods for kitchen were smeary. There were garbage on floor in14.8%kitchen,16.5%of the kitchen floor was smeary and26.6%were dusty.24.9%of the tabletop in home kitchen were smeary,14.3%were dusty. There were garbage in basin in7.9%kitchen and19.9%were smeary. There were mixing of raw and cook food in52.2%of cold storage and28.8%of freezer in refrigerator. There was peculiar smell in15.4%of the refrigerators.99.6%and99.3%of the families took absolute cleaning in chopping blocks and tabletops within one week.99.1%dealt with garbage every day.95%cleaned dishcloth every day.78.4%and73.5%cleaned extrator hoods for kitchen and refrigerator. The bad sanitation habit of resident:69.4%of the families store garbage without cover,59.7%and46.3%chopped raw food and cooked food with same chopping block and knife.37.1%residents took food of the previous night without entirely reheated.22.4%resident prepared salad with unboiled water.9.7%resident used dishcloth to clean other things. Microbial contamination:there were one or more samples contaminated by coliform group in69.0%of the home kitchen.38.7%of the dishcloths,36.3%of the bowls,31.3%of the chopping blocks and16.0%of the chopsticks were contaminated by coliform group.7.0%of the resident had diarrhea due to insalutary factors in home kitchen last year. Correlation analysis: there was correlative relationship between resident diarrhea times and contaminated sample numbers, the spearman correlation coefficients=0.187, p=0.000. The contaminated degree of bowls, dishes, chopsticks, chopping blocks and dishcloths had correlative relationship with diarrhea times, the spearman correlation coefficients are0.195,0.177,0.123,0.137and0.116, p<0.05. There was correlation between resident’s bad hygiene habits in kitchen and diarrhea times, the spearman correlation coefficients=0.088, p=0.002.[Conclusion] There were problems in home hygienic status in Shanghai, dishcloths, bowls, chopping blocks and chopsticks were contaminated by coliform group. Many residents had bad hygiene habits in kitchen, for example:storing garbage without cover, chopping raw food and cooked food with same chopping block and knife. All of these could affect on resident’s health status. Strengthen of health education are needed to improve the situation.
