Iron is a trace element which is necessary for normal body physiology.The main function of iron in the human body is to synthetise myoglobin and hemoglobin,and combine them to form red blood cells and participate in the organization of the oxygen and carbon dioxide conversion.People will deficiency of iron deficiency anemia if lack of iron.Selenium is important for prevention of the disease and prevent aging,known as the protector of life.It's confirmed that the main function of selenium is to catalyze peroxide decomposition,block the chain reaction of lipid peroxidation,remove some of the organic hydride,to protect the structural integrity and functionality of the biofilm.Zinc is a activator of many enzymes and prosthetic group which can maintain the body's growth and development,normal taste,Vitamin A metabolism,promote the body's normal sexual development.The biological activity of germanium mainly on cell growth and metabolic role in promoting,immunomodulatory effects,free radical scavenging action coordination,oxygen enrichment and so on,which can enhance immune function,prevention and treatment many diseases.These elements are essential but a general lack of for the body.To solve this problem,combined with previous research,this study is intended to explore,cultivate vegetables with trace elements.According to the result of the measurement whether the supplement trace element to the human body lack through bioaugmentation method is available.Sprouts are rich in nutrients,crisp taste,the human body contains essential amino acids and minerals,and compared to other vegetables.And its production cycle is short,culture conditions is easy to control,so we selected iron,selenium,zinc and germanium,configure different concentrations,respectively,with seed soaking and spraying method,enriched them into pea sprouts.By measuring the results,explore trace element,yield,quality and antioxidant capacity in pea sprouts.The results showed that :1.Adding the right amount of iron,selenium,zinc and germanium elements,sprouts yield,quality and resistance and antioxygenation has promoted on pea sprouts.2.Before the optimum concentration,the effect of spraying basic group was better than soaking seeds under the same concentration of trace elements on pea sprouts.Over the optimum concentration,along with the increase of trace elements,spraying group Soaking with a larger negative impact than soaking group.3.In an iron concentration of 25 mg/L,the chlorophyll content of pea sprouts have reached the peak and the most beneficial to photosynthesis.In an iron concentration of30mg/L,the increase of the sprouts production,iron enriched,Vitamin C content,soluble sugar content and protein content achieve maximum.The fresh weight of spraying group was increased by 25.73% compared to control.The iron content in the treatment group is about eight times to the control group,Vitamin C content is 6.34 times to the control.Compared with the control group,soluble sugar content increased by 38.65 percent,and an increase of 25.61 percent on the protein content.Iron concentration in the 35 mg/L,the total phenolic content than the control group increased by about 150 percent;total antioxidant capacity is 8.25-9.25 times to the control group,when the iron concentrations greater than 35 mg/L,total phenolic content and antioxidant would have a sharp decline.4.When the selenium concentration reached 200 mg/L,the Vitamin C content of pea sprouts had the largest 0.329 ?mol/g.FW,is more than tenfold to control;the total phenolic content is highest which is 3-4 times with the control group.In a selenium concentration of 400 mg/L,the pea sprouts grow best,fresh weight was improved37.33%-45.07% than the control group;the content of soluble sugar and protein,respectively,an increase of 60.20% and 20.55% compared with the control group;the total antioxidant capacity is 10.75 times to the control group.In the concentration range of test settings,selenium content has not reached the highest value increase.5.When the zinc concentration is 40 mg/L,the total phenol content shoots the highest,is 4.9 times higher than control;and total antioxidant capacity of the experimental group had a very significant increase that is 33 times higher compared with the control group;the total antioxidant capacity decreased rapidly while zinc concentrations greater than 40 mg/L.When the zinc concentration reached 50 mg/L,the pea sprouts get the highest yield,fresh weight improved 45.07% than the control group;height was increased by 29.08 percent;at the same time,Vitamin C content of the treated group has improved significantly and reach the peak in 50 mg/L,is 10.81 times better compared with the control.In the concentration range of test settings,the amount of zinc sprouts have been increasing but did not reach the peak.6.In the germanium concentration of 200 mg/L,the Vitamin C content get highest in spraying group,is 0.209 ?mol/g.FW and 6.53 times of the control.In germanium concentration of 400 mg/L,the content of chlorophyll,yield of pea sprouts is the best,fresh weight of soaking group improved quarter than the control group;and protein concentration are 474.25 mg/g,38.01% more than the control;the highest total phenol content,reaching 45.57 mg/g,is 5.9 times to the control;resistance to oxidation is strongest and 40.25 times higher than control which is indicating that the addition ofgermanium pea sprouts can greatly improve the oxidation resistance,however,when the germanium concentration greater than 400 mg/L,total anti-oxidation decreased rapidly.When the germanium concentration is 500 mg/L,the soluble sugar content spraying group was 105.73 mg/g and 1.60 times than the control.
