For thousands of years gone by,Vietnam and China have always been closely related in many aspects from national borders, politics to trading. The relationship have been increasingly consolidated as a result of communication in culture, economics, education, politics etc. However, many interesting issues in the aspect of cross-cultural exchange have still been waiting for passionate researchers to excavate.Accordingly,Chinese-Vietnamese cuisine cross-cultural exchange is selected for this thesis and specifically analyzed on the basis of rice-made food,bean-made food and noodle-made food.In spite of multiple differences, the cuisines of China and Vietnam are in a homologous relationship. The two national cuisines are mutually referenced and improved. The acceptance level is also very high, which is beneficial to the homologous result.Yet,after one nation's cuisine is introduced into the other's,it is more or less adjusted to be suitable with the local flavor, which is derived from the two national different flows of cuisine. This phenomenon helps the domestic cuisine to be developed and spread out in the other nation. The specialties have been mutually brought between Vietnam and China and warmly welcomed by the localists. Moreover, cuisine culture and cross-cultural exchange have a tight relationship.Different nations, even different ethnic groups of one nation exist their own cuisine characteristics. Many aspects of eating habits like cuisine concepts, geographic reasons, cuisine contents, table manners etc.are inherently to be analyzed to reveal the features of the two national cuisines and simultaneously represent the increasingly mixed trend and development of Chinese-Vietnamese cuisines through cross-cultural exchange.
