Resveratrol is a polyphenolic compound containing a stilbene structure.It is a kind of metabolic product in in resist diseases,UV irradiation damage.It plays an important role in the prevention of cancer and heart cerebrovascular disease to human's health.In this paper,Marselan and Cabernet Sauvignon from Shandong Province,and Cabernet Sauvignon from Shandong,Hebei,Xinjiang,Ningxia,and Yunnan Province as experimental material,studied the resveratrol and its glycoside of grapes and wines by HPLC,and analyzed the quality of the grapes and wines.The results are as follows:(1)The total soluble solid content of Marselan is 3.7°Brix higher than Cabernet Sauvignon,and its sugar-acid ratio is higher than Cabernet Sauvignon obviously.It means that the maturity of Marselan is better than Cabernet Sauvignon.As for Phenolics,the Cabernet Sauvignon is higher than Marselan.(2)In the growing process of grapes,the total content of resveratrol in Cabernet Sauvignon remains increasing,but the total content in Marselan increases first and then decreases after 77 days of flower.The tendency of trans-pd is similar with res,but the content of trans-res and cis-pd is in a very low level.(3)In the process of fermentation of wine,the content of resveratrol increases first and then decreases after 10 days of fermentation,and the two kinds of wines get the similar results.During MLF,the content of resveratrol is declined to some extent.And during aging of wines,the content of resveratrol almost invariant.(4)The contents of TSS?TA?pH and phenolics of grape from different regions differ greatly.The maturity of grape from Xinjiang is higher,while the maturity of grape from Shandong and Hebei is lower.The phenolics of grape from Xinjiang and Yunnan is high and stable.The differences in wines are similar with corresponding grapes.(5)The content of resveratrol in grapes from different regions between 6.32mg/g-12.22mg/g.The trans-pd cotent between 2.98 mg/g-9.98 mg/g,and it has had the most cases.The trans-res and cis-pd contents are between 1.18 mg/g-2.88 mg/g and 0.11mg/g-5.02mg/g respectively.(6)The content of resveratrol in wines from different regions between 2.57 mg/L-8.21 mg/L.The trans-pd cotent between 1.23 mg/L-6.24 mg/L,and it has had the most cases.The trans-res and cis-pd contents are between 0.09 mg/L-1.87 mg/L and 0.09 mg/L-3.47 mg/L respectively.(7)The result indicates that the correlation between the content of resveratrol in grapes and in wines is significant.There was a positive correlation between the total content of resveratrol and TSS.
