High standard wine comes from high quality grape.This study established a white grape evaluation model for wine processing based on 32 sensory,processing and nutritional index of wine grapes in 2010.Because the identification and classification of grapes became even more difficult,SSR finger prints was used to identify different grape cultivars.The results were as follows:1.Principal component analysis,cluster analysis was made on 32 sensory,processing and nutritional index of wine grapes.Using linear regression analysis method with sensory score as dependent variable and physicochemical indexes as variables in order to establish multiple linear regression equations of white wine processing suitability evaluation model.The results showed that forecasting samples obtained by linear regression equation of the indicators and the actual results of sensory score was higher fitting degree(R2=0.831),which showed that the evaluation model can predict the processing quality of wine grape.2.According to regression coefficient and weight of 6 evaluation indexes(total sugar content,flavonoid content,amino acid content,titratable acid content,fruit quality and the activity of polyphenol oxidase)screened out from the wine grape suitability evaluation model,we then use K-means clustering method to calculate 6 physicochemical means clustering center target value.According to the clustering center value,the 6 physical distribution of index values and the needs of practical applications,wine grape quality grade was also made:the most suitable grade Ⅰ;suitable grade Ⅱ;less suitable grade Ⅲ and the least appropriate grade Ⅳ).Sauvignon Blanc,Traminer,Yarly Madeleine,White Riesling,Riesling,Grey Riesling,Migela,Chardonnay(8 cultivars)was classified in grade Ⅰ;Pinot Blanc,A3aTeHN,Folle Blanche,Ecolly,and Colombard was in grade Ⅱ;Гордан,Bлощ Vioshi and the other two cultivars were in grade Ⅲ;Only Bacatorred was divided to the least appropriate grade Ⅳ.It showed that wine(white)quality and processing suitability of grapes can be evaluated by this evaluation standard.3.14 SSR primers were used to identify 13 wine grapes and to establish DNA fingerprints.It was illustrated that there were 312 bands altogether,including 283 polymorphic bands(90.71%)and 78 specific bands(25.00%).All the 13 cultivars maintained specific primers;For the cultivars Yarly Madeleine and Riesling,there were five specific primers each.Among 14 primers,VrZAG79,which was the specific primer for seven cultivars,owned more total bands,polymorphic bands and specific bands,and it shown the large difference among different cultivars.The identification efficiency of 13 cultivars ranged between 30.77%(VVS5)-100%(VrZAG62,VVIb66).Large difference was shown among different cultivars;four primers(VrZAG62,VrZAG79,VVIb66 and VVMD5)could identify all the cultivars respectively.
