| Chinese food culture has a long history of thousands of years,from the" governing a large country like cooking a small fish" to " food is the first necessity of the people",intangible cultural heritage of diet is inseparate with daily life and work.It not only vividly reflects the Chinese food culture,but is an important crystallization of Chinese civilization over thousands of years.Other countries have made fast progress in study and projects of dietary intangible cultural heritage.However,due to variability and mobility,as well as the impact of the modernization,the study and protection of the dietary intangible cultural heritage is difficult,and the progress is relatively slow.In Hangzhou,the capital of the Southern Song Dynasty and the southeast of the city of cultural and economic importance,the local people inherit and retain a lot of dietary intangible cultural heritage in the production and life.For example the traditional Hangzhou dishes cooking skills,Kui yuan flour-made food cooking skills and other food categories of intangible cultural heritage are still inherited and continued in the time-honored enterprises,which are the carriers of it.But now the ecological environment is different from the past that many problems raised from the inheriting and protecting of intangible cultural heritage based on agriculture,like the reality and accuracy cannot be assured.Meanwhile,some negative preference was found in applying for protection,like paying more attention to topic declaration than project protection,driven by government and follwed by industry,suggested by experts and decided by leaders,aimed at brand benefit,only protect inheritors,etc.If these problems are not settled well,the dietary intangible cultural heritage will lose the original features,even will be destroyed and disappeared.Based on the above background,this paper established a research topic of protection and inheritance situation of dietary intangible cultural heritage in Hangzhou,and formed a more intuitive cognition through the analysis of government guidance effect,heritage status and protection.This paper constructs the research framework of research background,significance,contents,methods,and theory.Further this study reorganizes the existing system of the dietary intangible cultural heritage in Hangzhou,and its value are analyzed.Next,it forms cognition of existing system of dietary intangible cultural heritage from two respects:protection situation and recognition of inheritors of it.Then,this-study analyzes problems in protection and inherit and put forward targeted strategies.Every local governments should increase the input of protecting dietary intangible cultural heritage,driving production to protect itself,insure its inherit.People should enhance their awareness of dietary intangible cultural heritage to make this treasure of historical culture created by ancestors continued. |
