Hunan cuisine which has been developed for around 2300 years belongs to Chinese eight cuisine. In recent years, the fast food chain enterprise which is characterize by "Hunan Cuisine" has sprung up as a result of eocnomic development, change of current political situation and increased demand of dining out. However, these catering enterprises have come across several problems in the course of their exploration of chained opearation due to lack of standardized managemen knowledge. Therefore, it would be of great importance to research one set of feasible and standardized enterprise chain management system, which will accelerate the development of those "Hunan Cuisine" fast food chain enterprise.This article adopts the method of combining field survey and article research, analyses the operation environment and standardized system of "Hunan Cuisine" fast food chain and formulates a set of standardized system. Then, a further reserach is made on the operation environment and standardized system of a local fast food chain enterprises. The main problems exisiting in standardized dish, operation management, service level, dining enviroment, human resource and brand management during the process of development has been reserched. The main conclusion is as follows:I Hunan cuisine fast-food chain industry is developing well, but restricted at the same time. In the political factor, several policies have been introduced, which are conducive to the development of catering industry and guarantee food safety as well. In the economy factor, changes of consumption concept has promoted the development of catering industry. However, it is restricted by the undeveloped production equipment and process application.II The establishment of Hunan fast-food chain standardized system is imperative. Analysis of main problems e.g. dish, operation management, service level and dining environment standardization have been done.IHFurthermore, this article theoritically analyses the construction of standardized operation management system of "Hunan Cuisine" fast food chain. It includes:food processing standardization, food quality standardization, standardization of dishes formula, standardization of cooking process and equipment, service and dining environment standardization, standardization of enterprise culture, HR training standardization, RD standardization and brand management standardization.IVThe management system in a local fast food chain enterprises, Ltd. conforms to the development of modern catering industry, and provides a good management reference to Hunan cuisine fast food enterprises. The standardization of enterprise in this company absorbs the experience of western fast food production and service, and combines it with the conception of Hunan cuisine. It is customer orientated, and pays attention to employee training and brand culture promotion, which makes it develops better and becomes a tower of strength of the Hunan cuisine fast-food chain industry.
