Meat Food Security Early Warning Research Based On Supply Chain

Meat is the main food of consumers in China, however, in recentyears,"water injection meat","clenbuterol","bird flu" events such asfrequent outbreaks. in a certain extent, they caused the social panic. As isknown to all, meat is aroused people attaches great importance to thefield of food safety. The Study of meat safety problem has very importantsignificance.In this paper, meat dish security as the research object, from theperspective of supply chain, according to the logic of the early warningtheory and risk analysis theory, analytic hierarchy process was used toconstruct meat indicators of food security early warning system, earlywarning model of a meat dish.The main research contents include: Firstly, in the analysis of therelevant research results of domestic and foreign food safety earlywarning, put forward his study idea. Secondly, on the definition of theconcept of the supply chain, the food supply chain, food safety, earlywarning, to analyze the logic of early warning theory and risk analysistheory. Thirdly，analysis of the current situation and the factors influencethe meat safety of China’s food safety of meat. The security situation is ameat dish safety standards continue to improve, but the situation is stillgrim; on this basis, to find out the influencing factors of safety meat dishfrom raw material procurement, production, distribution and safetymanagement. Fourth, by analyzing the factors which influence the foodproblem, using analytic hierarchy process, according to the scientific,systematic, operational principle, as well as to the expert’s advice, established15meat dish security early warning index. And throughexpert interviews, calculate the weights using judgment matrix, Feedsampling qualified rate is the biggest safety factors affecting meat dish,followed by the veterinary drug residues exceed the standard, thestandard processing technology, food additive content. Finally, accordingto the historical data, the use of Likert five point scale setting indicatorsalarm limit. To construct meat dish security early warning model usingmulti-objective linear weighting function method. Data are obtained bycorporate research, the model is applied to the practice.
