Along with the development of social economy, the population increasing, thegrowing demand of food resources, and the sharp expansion of food production, foodsafety is very extensive and complex problem. It relationship to the social public’shealth and life safety and become an important global public health problem. In thedevelopment of the food industry, the engineer is one of the key rings. The engineer’sethical consciousness weak is one of the main problems that food safety incidents moreand more happen in China. So, this part analyses ethical responsibilities offood industry engineers and construct the corresponding ethical standards is particularlyurgent.This paper is divided into four parts to carry on the analysis to the engineer’sethical responsibility in food safety incidents. The first part is the introduction. Thispart’s background is the origin of ethics from the food safety problems. It describes thecurrent domestic and international research for this field of engineering ethicalresponsibilities. This paper has great theoretical and practical significance of food safetyissues and engineering’s ethical responsibilities.The second part mainly starts from the theoretical basis. This part describeswhat engineers are and what engineering’s ethics is. Engineers have three kinds of roleorientation as well as employees, technical personnel and the social people.Further explain this special group of engineers. At last, this part analyses theresponsibilities’ dimensionality of engineers’ occupation ethics. We can see the decisiverole in the technical development and application of the process of engineers mainlyfrom the three aspects of the product, environment, technology innovation and transfer.The third part criticizes several existing theory of engineering technology. At thesame time, this part’s combined with the current food safety problems in China thatdescript three kinds of ethical responsibility predicament are the engineer pay moreattention to benefit than ethics, the efficiency as the guidance, person is only thegovernment subordinate. Thus this part comprehensively analysis the causes of theengineers’ ethics deletion.The fourth part construct the ethical responsibility of engineers in food engineeringthat is based on the above analysis. First of all, we should establish perfect engineeringethics system of food. It points out that when the engineers make decision of the engineering. He must give up the individual autonomy and carry out the principle ofinformed consent. In the project prior to the implementation of the project, the engineerneed build the pre-control scheme. And the engineer should have active sense ofresponsibility. They should introduce the mechanism of evaluation the project. What’smore, we need carry out the engineering ethics education to the students of theengineering major in the university. These future engineers should build engineeringethics consciousness. At last, food engineering ethics need to rise to the level of law.The stability, mandatory and authority of law can constraint the various types ofpossibility behavior in engineering, So, the development of our food industry will bebenign and fast. Food is the most important part of people’s life. Our society canbe harmonious and stable must have healthy and nutritious food.
