[purpose]According to the study of the condition of wheat flour in Yuncheng City during late three years, the author aims to analyze related factors affecting the quality of wheat flour, put forward corresponding measures for improvement, and provide technical support for the enterprise for the production and processing of wheat flout. [Methods] The author collects the materials,170 copies in total, mainly from the inspection reports of the license issuing, supervision of random tests and authorization,which are conducted by Yuncheng quality and technical supervision tests in year 2012,2013 and 2014. According to the data of annual inspection the author analyses the quality indicators, pesticide residues, heavy metal pollutants and other illegal additives. [Result] According to the late-three-year inspection reports, the author finds that all the items are 100% qualified, except for the moisture and ash content,which are not qualified occasionally. [Conclusion] Through the analysis of the possible factors leading to disqualified moisture and ash content, the paper aims to put forward the instructions for enterprises of wheat flour processing for the improvement of the production process, enhance economic benefits, as well as guarantee the quality of wheat flour in Yuncheng and ensure the food safety for people in Yuncheng.
