In the Northeast, Acer mandshuricum is one of the most important ornamental trees in autumn, and it has bright-colored red leaf in autumn, even ideals for very good leaf material in pressed-dried flower art, but there are color migration, fading and other problems on dried leaves. In this thesis, taking Acer mandshuricum red autumn leaves as raw material, by studying the extraction of red pigment from its leaves, pigment molecules related features Etc., to investigate the suitability of the best red leaf color retention processes, and used in dried flower retention technology which reached leaf color retention purposes, and make it play a greater role in pressed-dried flower art, providing the theoretical foundation and scientific basis for the further development and utilization at the same time.In the research of extraction technology of red pigments, the processed were optimized using ratio of material/extractor, temperature, time and extraction agent as factors with extraction solvents by orthogonal test L9(34). From the result of the orthogonal experiment, we can know that in determining the effect pigment extraction factor of four, the effect of the ratio of material/extractor was best, the others were lower than its. Making certain the optimum technical conditions of extraction was material/extractor ratio1:50, extraction temperature70℃, the extraction solvent was70%ethanol and hydrochloric acid solvent, extraction time2hours.In the research of the characteristics of the pigment molecules, the pigment is water-soluble, alcohol-soluble pigment, confirming the maximum absorption band was535nm. It was inferred that the sample may contain cyanidin-3-glucoside and delphinidin-3-glucoside and one unknown peonidin. Effection of pH on the stability of anthocyanins is more obvious, lower pH can be kept the color of anthocyanin stable, when the value of pH became greater than five, the color of solution turn into reddish-brown, and it rendered dark green in strongly alkaline solution. The anthocyanins has a certain heat resistance when the temperature lower than70℃, and if the temperature continued to rise, the anthocyanins would be degradated. Oxidizing and reducing agents destroy the anthocyanin seriouly, and the anthocyanin is sensitive to light. After joining the metal icon K+、Na+、Ca2+、Mg2+and Etc., the solvent absorbency was not too distinctness; low concentrations of Al3+could make the absorbance increase; while Cu2+, Fe3+and Fe2+could destructive to anthocyanins. Sucrose, glucose and citric acid on suitable concentration could make the solution more colorful, and could be appropriately added in the preparation of color retention agent.In the research of the embossed color retention applications, it was better to dry naturally for red leaves of Acer mandshuricum, the best color protecting solvent was 7%suerose+7%citric acid+Zn2+, and leaves after color retention treatment can withstand a certain time of natural light, it still without browning color, the color retention agent was validated with good color maintenance, and can be used in pressed flower painting creations.
